Most reliable nutrition information can be found online, but it can be nearly impossible to differentiate from the unreliable blogs and websites that claim their information is correct. Because of this, it can be difficult for students to determine which information is true and which advice they will follow. During this time of growth and learning, it is essential that students have access to accurate information that will help them to be healthier individuals for years to come. The goal of this project was to provide students with an easily accessible and reliable resource for nutrition information that was presented in a simple and relatable way. Ghrelin is an acylated peptide hormone with far reaching affects within the human body. Consisting of both central and peripheral effects, ghrelin has been the topic of research since its discovery in 1999. These effects include energy maintenance, cardiovascular health, growth hormone mediation, glucose homeostasis, muscle growth and atrophy, and bone metabolism, all of which work in concert with other well-known physiological mechanisms. With the goal to reproduce a similar study done in females in males, this study hypothesized that ghrelin would present an inverse relationship with a young healthy male population's resting metabolic rates. The study consisted of taking resting metabolic rate measurements, dual-energy X-ray absorptiometry, blood ghrelin testing, and statistical analysis of the data. The hypothesis was shown to be incorrect as the data showed a positive correlation, albeit, with very low statistical significance. Despite the data, past research has shown ghrelin plays a major role in fat gain, fat loss, and energy expenditure. Obesity is plaguing the world and becoming a major pubic health concern. It is necessary to explore causality and casual relationships in order to better understand and combat obesity. Therefore, further research is warranted into ghrelin and energy expenditure as a biomarker or novel treatment for obesity.

Injury Prevention of Young Adult Competitive Athletes Abstract: This literature review covers many aspects of health and injury prevention that affects the young adult population. This review will begin to formulate a general guideline for sustaining performance while minimizing the incidence for injury. This population is specifically narrowed down to competitive athletes between the ages of 16-22. Some of the topics covered in this paper are the effects of macro-nutrients and micro-nutrients such as iron, calcium, vitamin D and vitamin C, on the body. Along with relating nutrition to lowering the risk of injury, there are also other topics covered such as sleep, stress relief in the form of binaural sounds, training and over-training. Nutrition topics include carbohydrates, proteins and fats, which are then split into their respective roles inside the body. These macro-nutrients are also associated with recovery and the timing and quantity consumed can be at optimal levels for competitive athletes based on gender, age and size. The vitamins and minerals discussed are also important factors in injury prevention related to bone, ligament and muscle strength. These micro-nutrients are also related to hormone regulation and immune system response which are necessary in mitigating the risk of injury in the population being analyzed. Finally, there is a training section of this literary review which covers monitoring external and internal loads experienced by the athletes, movement patterns as well as flexibility, and how to respond to over-training syndrome and overreaching in young adult athletes. Creating a balance between all aspects covered will result in a high likelihood of reducing the risk for injury in the young adult population.

Female Collegiate Gymnast's Nutritional Knowledge and Health

Forty collegiate gymnasts were recruited for a nutrition and health study. Participants must have been at least eighteen years old at Arizona State University (ASU) in the club or team gymnastics program. The Institutional Review Board (IRB) reviewed and accepted my survey in order to hand out to the gymnasts. The ASU club and team coach and the ASU study team also approved my survey. As soon as the survey was approved, it was emailed to all of the gymnasts. ASU gymnasts were surveyed on nutritional knowledge and personal health. Subjects answered a quiz on nutrient needs and serving sizes. Personal questions consisted of height, weight, injuries, body image, and typical meal plans. Gymnasts were given a $10 compensation to increase the participation. We found that only 16% of gymnasts surveyed scored a 70% or higher on their nutritional knowledge. Although these gymnasts do not have adequate knowledge, the majority consume a healthy diet. Diets included fruits, vegetables, protein-rich foods, and few high fat and sugary foods. Four of the gymnasts had one or fewer injuries in the past two years, although, four gymnasts also had three or more injuries. No correlation was found between diet and injuries. There was also no correlation between the gymnast's nutritional knowledge and their health.

For this creative project, the student's overarching objective was to establish a signature dish and to learn how to cook. She acquired a cookbook fit for novice cooks, "Eat What You Love" by Marlene Koch, which focused on healthy eating through the reduction of sugar and fat. The student completed thirty recipes including two appetizers, five breakfast entrees, five lunch entrees, twelve dinner entrees, and six desserts. Her culinary ventures were then detailed through a blog site the student had created. Blog posts included a brief description primarily of the portion size, a nutritional analysis of the recipe, enjoyable aspects of the dish, whether something went wrong, what was learned from creating the dish, as well as a photograph of the prepared dish. A large element of this project focused upon food photography and obtaining images that made the created dish look appealing. It was found that the best images were taken in natural lighting with good compositions and pops of color. In order to gain readership, the student developed an Instagram account where she would post images of the food and provide links to her blog entries and recipes. Through this means, she was able to obtain over 100 followers to her blog. In addition to learning how to cook, the student sought out to understand components of a healthy diet and how each nutrient contributes to an individual health. This objective is detailed throughout the course of the paper as well as several other objectives. The student also studied how social media has impacted the way in which we share food and our knowledge of food. Additionally in this paper, the student evaluated the evolution of the USDA Dietary Guidelines and their effectiveness over time. From this project, the student walked away with new knowledge about nutritional eating and lifestyle habits that she will retain for years to come. She hopes that this project will encourage other students to take on their own culinary adventure.

Multiple sclerosis is currently deemed the most common autoimmune disease. By definition, multiple sclerosis, known more commonly as MS, involves an immune-mediated process in which an abnormal response of the body’s immune system is directed against the central nervous system (“Definition of MS,” n.d.). Common treatment protocols call for daily, monthly, or yearly disease-modifying medications. These drugs are taken indefinitely to stop the spread and appearance of new lesions, improve symptoms, and offer relief to the afflicted individuals. The necessity for patients to take these basic medical treatments is paramount, however, it should not be overlooked to make lifestyle changes as well. The purpose of this paper is to give a detailed understanding of multiple sclerosis, its etiology evolution, and medical advancements, while emphasizing the necessary transitions which must be made from a nutritional and lifestyle management standpoint. A brief focus will be placed on sleep, exercise, and stress management, with an emphasis on nutrition.

Supplementation of Vitamin B6 and Tryptophan: The Effects on Mood States Among College Club Sport Athletes

Description

There are many studies on vitamin B6 (pyrodoxine) or tryptophan (Trp) as a way to increase mood but there are little to no studies with these two nutrients supplemented together.

There are many studies on vitamin B6 (pyrodoxine) or tryptophan (Trp) as a way to increase mood but there are little to no studies with these two nutrients supplemented together. Trp is the precursor to serotonin that requires the cofactor pyridoxal phosphate (PLP). Serotonin plays a role in mood, sleep, appetite, and other wellbeing aspects and it is believed that low levels of serotonin is associated with the risk of developing depression, anxiety, and bipolar disorders. The amount of free Trp that can pass the blood-brain barrier (BBB) is influenced by factors such as cortisol, insulin, and competition from branch chain amino acids (BCAA). College students who exercise on a regular basis and participate in club sports may experience higher cortisol levels from stress of college and higher physical activity. Cortisol decreases the Trp levels in the plasma while BCAAs compete with Trp to pass through the BBB. Insulin promotes the passage of free Trp through the BBB. In the present study, 28 healthy active college students (21.0 ± 2.1 years, 24.5± 3.1 kg/m2) were divided into three groups: vitamin B6 (n=11), Trp (n=10), or both (n=10) (2 did not complete study). Blood serum pyridoxine levels and mood states were measured at baseline and at 4 weeks with Profile of Mood States (POMS), Depression Anxiety Stress Survey (DASS), Life Orientation Test-Revised (LOT-R), and Epworth sleep scale. In the combined sample, the total POMS score improved during the study (p=0.039) and the total DASS score tended to improve during the study (p=0.068). Thus, mean depression scores for all participants decreased during the 4-week supplementation study. However, there were no time x treatment effects noted at study completion. At baseline 18% of the participants were marginally deficient in vitamin B6 (serum pyridoxine <30nmol/L), and their total POMS score was raised 78% in comparison to participants with adequate vitamin B6 status (p=0.08). DASS scores were raised 48% in vitamin B6 deficient participants versus those with adequate vitamin B6 status (p=0.243). There were no significant changes (time or time x treatment) during the course of the study for the LOT-R or sleep scores. In summary, vitamin B6 deficiency in college student athletes was remarkably high (18%) compared to the national average reported by the CDC in 2012 (10.5%), and participants with vitamin B6 deficiency displayed heightened unfavorable mood states. Moreover, supplementation with vitamin B6, tryptophan, or vitamin B6 and tryptophan improved mood state in college student athletes, but there were no differences between treatments.

A key component to American weddings is the wedding cake and the number of customs associated with it. The History, Evolution, and Development of Wedding Cakes is a creative project that hopes to answer why the wedding cake is such an iconic item and what it represents. A historical study details the evolution from its origin to present day while a comparison of wedding cakes (or wedding cake analogs) from other cultures explores their role(s) across the globe. It was found that while little regard is given to the symbolism of the wedding cake today, its presence persists in some shape or form as it continues to evolve. Cultural variations were recreated to reflect personal interpretations of contemporary designs in addition to an original design of a contemporary-rustic American wedding cake.

This creative project seeks to demonstrate the nutritional and financial benefits of cooking in versus eating out to college age students. We sought to determine what factors significantly differentiated restaurant meals versus home-cooked versions, and how we could share this information with our peers to potentially influence them to make a healthy lifestyle change. The first step was to determine the factors that influence college-aged students eating habits, and was presented with a review of relevant literature in several topics. We researched food literacy in young adults, the impact of fast food, social media's role in healthy eating habits, health behavior change in young adults, and the benefits of home cooking to obtain a general baseline of the knowledge of college-aged students. The initial research was utilized to write more effective blog posts that appropriately addressed our targeted demographic and to determine what platforms would be most appropriate to convey our information. These ideas were taken and then translated into a blog and Instagram account that contained healthy, copycat recipes of popular restaurant meals. We wrote 30 blog posts which were made up of 20 original recipes, 8 nutrition informational posts, and an introduction/conclusion. Finally, a focus group was hosted to ascertain the opinions of our peers, and to determine if they would be willing to make a lifestyle change in the form of cooking more frequently as opposed to eating out regularly. We provided them with a pre and post survey to gather their opinions before and after reviewing the findings of our research and project. We concluded that if given the information in an accessible way, college students are willing to eat in, not out.

People have become increasingly perceptive in their health and well being. As a result, people are directing their attention to unconventional diet choices. A number of individuals are turning to a veganism. In 2017, six percent of Americans identified as vegan, up from only one percent in 2014. A vegan diet has been scientifically shown to have many health benefits when compared to the average western diet, which is typically inadequate in fruits, vegetables, legumes, whole grains, and contains excessive amounts of processed foods, alcohol, salt, red meat, and sugar. With its gain in popularity, and more people adopting the diet, comes a lot of controversies. There are many who support and advocate for it, including a number of celebrities, and health organizations like the American Diabetes Association and USDA. However, many people remain skeptical about its purpose and proposed benefits. There is a general lack of knowledge when it comes to veganism. The purpose of this study was to assess the attitudes and beliefs held by college students at Arizona State University about a vegan diet. A survey was prepared and later distributed to students of different majors across Arizona State University. A total of 100 students completed the survey. The results revealed that ASU students had varying beliefs in regard to a vegan diet, some accurate beliefs, and other inaccurate beliefs. In general, the vegan participants tend to be more accurate in their knowledge of a vegan diet, however, no statistical differences were found among the vegan and non-vegan (includes vegetarian, pescatarian and omnivorous) participants. Supplemental research should include a larger sample of vegan participants and should examine behavioral differences among vegans and non-vegans.
