Although past literature has examined the prevalence of campus food pantries, most have not examined student satisfaction of campus food pantries the acceptability and feasibility of the campus food pantries in the U.S. This descriptive and quasi-experimental study assessed the acceptability and feasibility of campus food pantry intervention on two campuses (Downtown Phoenix and Tempe) at Arizona State University (ASU). The acceptability measures were composed of 30 survey questions including demographics, satisfaction survey, and food insecurity questionnaires, which were abstracted from the U.S. Adult 10-Item Food Security Survey Module. The food pantry was open once a week at each site. Any ASU students who enrolled in Spring 2017 and visited a food pantry were eligible to participate in the study. A total of 39 ASU students participated in the study during January 2017 and February 2017 (48.1 % female, 42.3 % White). The number of surveys collected at each site was 52. The majority of students were first-year undergraduate students (57.9% Downtown Phoenix, 45.5% Tempe). Based on their answers to the U.S. Adult 10-Item Food Security Survey Module, 21.2% of students (n=11) indicated low food security, while 48.1% of students (n=25) indicated very low food security. Almost 70% of pantry users reported that they have experienced food insecurity. In this study, the majority (90%) of students were satisfied with the service, hours of operation, and location for both the Downtown and Tempe food pantries. Additionally, 85.7% of students reported that they need additional resources such as financial aid (49%), a career center (18.4%), health services (10.2%), and other services (8.2%). The Pitchfork Pantry operated by student, university, and community support. Total donations received between Fall 2016 and Spring 2017 were 4,600 food items. The study found that most students were highly satisfied with the campus food pantries and it was feasible to operate two pantries on the ASU campus. These findings can be used to contribute to future research into campus food pantries, which may be the solution for food insecurity intervention among college populations.

To evaluate the effects of a lifestyle intervention to prevent type 2 diabetes among obese prediabetic Latino adolescents on oxidized lipoproteins. Design: In a quasi-experimental design, 35 adolescents (51.4% male, age 15.5(1.0) y, body mass index (BMI) percentile 98.5(1.2), and glucose 2 hours after an oral glucose tolerance test-OGTT 141.2(12.2) mg/dL) participated in a 12-week intervention that included weekly exercise (three 60 min-sessions) and nutrition education (one 60 min-session). Outcomes measured at baseline and post-intervention were: fasting oxidized LDL and oxidized HDL (oxLDL and oxHDL) as oxidative stress variables; dietary intake of fresh fruit and vegetable (F&V) and fitness (VO2max) as behavioral variables; weight, BMI, body fat, and waist circumference as anthropometric variables; fasting glucose and insulin, 2hour glucose and insulin after an OGTT, insulin resistance (HOMA-IR), and lipid panel (triglycerides, total cholesterol, VLDL-c, LDL-c, HDL-c, and Non-HDL) as cardiometabolic variables. Results. Comparing baseline to post-intervention, significant decreases in oxLDL concentration were shown (51.0(14.0) and 48.7(12.8) U/L, p=0.022); however, the intervention did not decrease oxHDL (395.2(94.6) and 416.1(98.4) ng/mL, p=0.944). F&V dietary intake (116.4(97.0) and 165.8(91.0) g/d, p=0.025) and VO2max (29.7(5.0) and 31.6(4.7) ml*kg-1*min-1, p<0.001) significantly increased. Within-subjects correlations between changes in F&V intake and oxidized lipoproteins, adjusted for VO2max changes, were non-significant (R=-0.15, p=0.52 for oxLDL; R=0.22, p=0.25 for oxHDL). Anthropometric variables were significantly reduced (weight -1.3% p=0.042; BMI -2.2% and BMI percentile -0.4%, p=0.001; body fat -6.6% and waist circumference -1.8%, p=0.025). Cardiometabolic variables significantly improved, including reductions in glucose 2hour (-19.3% p<0.001), fasting insulin (-12.9% p=0.008), insulin 2hour (-53.5% p<0.001), and HOMA-IR (-12.5% p=0.015), with 23 participants (66%) that reverted toward a normal glucose tolerance status. Most lipid panel significantly changed (triglycerides -10.2% p=0.032; total cholesterol -5.4% p=0.002; VLDL-c -10.4% p=0.029; HDL-c -3.2% p=0.022; and Non-HDL -5.5% p=0.0007). Conclusion. The intervention resulted in differential effects on oxidized lipoproteins and significant improvements in behavioral, anthropometric and cardiometabolic variables, reducing the high metabolic risk of obese prediabetic kids.

Objectives. This study primarily explored the relationship between family meal frequency and youth intake of fruits and vegetables (FV) and added sugar from sugar-sweetened beverages (SSBs) in a population of Latinx parents and their middle school children. The study secondarily explored factors influencing family meal frequency; specifically, whether parent education level, income level, acculturation level, and food insecurity are associated with family meal frequency.

Methods. Latinx parents and their 6th-8th grade children were recruited from eligible middle schools in Maricopa County to participate in a larger intervention study. A sample of parent-youth dyads from the first cohort of the larger study was selected for cross-sectional analysis of baseline data in this study (n=124). Participants completed a survey requesting demographics, family meal habits, and dietary intake. Participants were asked to report annual income, education level, and number of family meals in the home in the past week. They were also asked to complete an Acculturation Rating Scale for Mexican Americans, a 6-item Household Food Security Questionnaire, and a 26-question Dietary Screener Questionnaire. Analyses were run using Spearman’s Rank Correlation test and a Chi Square test of Independence.

Results. Mean daily youth intake of FV was 2.7 ± 1.4 cup equivalents, and daily youth intake of sugars from SSBs was 8.6 ± 4.9 teaspoon equivalents per day. Fifty percent of parents reported 7 or more family meals per week, while 38.7% reported 3-6 family meals per week and 11.3% reported 2 or fewer family meals per week. There was no significant association between family meal frequency and youth FV (r=-0.154; p=0.256) or added sugar from SSBs (r=0.027; p=0.807) intake. Similarly, results from Chi Square analyses suggested there was no association between family meal frequency and parent income level (p=0.392), Mexican-oriented acculturation level (p=0.591), Anglo-oriented acculturation level (p=0.052) and food insecurity (p=0.754). In contrast, a significant association between parent education and family meal frequency was found (p=0.014).

Conclusions. Parent education may play a role in shaping family meal practices in Latinx families. More research is needed to further understand this relationship and the relationship between family meal habits and youth dietary intake.

Objective: Migration to the United States (U.S.) has been associated with food insecurity and detrimental changes in diet quality. How these changes affect women in context of their neighborhood food environment has not been thoroughly explored. This study aimed to assess if food security is associated with diet quality and to explore if perceived food availability moderates this purported association in a sample of Mexican immigrant women.

Methods: Mexican-born women (n=57, 41±7 years) residing in the U.S. for more than 1 year self-reported food security status, monthly fast-food frequency, and their perception of fruit, vegetables, and low-fat product availability within their neighborhood via survey. Diet was assessed using the Southwest Food Frequency Questionnaire to estimate intake of fruit, vegetables, salty snacks, sugar, and healthy eating index (HEI)-2015 score. Bivariate correlations assessed the relationships between study variables. Independent samples t-tests compared dietary outcomes between women classified as food secure (n=41; high or marginal food security) and food insecure (n=16; low or very low food security). A moderation analysis assessed the effect of the perception of the neighborhood food environment on the relationship between food security and HEI-2015 score.

Results: Fifty four percent of participants worked full time and 42% had a monthly household income <$2,000. Time residing in the U.S. was 20±9 years. Relative to women classified as food secure, participants experiencing food insecurity had lower HEI-2015 (61±8 vs. 66±6; p=0.03). Albeit not significantly different, women experiencing food insecurity reported lower intake of fruit (236±178 vs. 294±239 g), vegetables (303±188 vs. 331±199 g), and salty snacks (6±5 vs. 8±10 g), as well as higher intake of sugar (99±55 vs. 96±56 g) and fast food (2.5±2.5 vs. 1.8±1.7 times per month); p>0.05 for all. Among women experiencing food insecurity, there was a trend for a lower perception of neighborhood fruit, vegetable and low-fat product availability being associated with lower HEI-2015 scores (54±6) relative to those who perceived moderate (63±6) or high (65±8) neighborhood availability of those foods (p=0.07).

Conclusions: HEI-2015 scores were associated with participants’ food security status. Findings suggest a need for better understanding of how neighborhood food availability may affect diet quality among Mexican immigrant women experiencing food insecurity.

Beginning in March 2020, the COVID-19 pandemic triggered a sudden and severe economic downturn and led to disruptions in domestic and international food systems and supply chains. Over the first few months of the pandemic, in the United States, many stores had empty shelves, bars and restaurants closed, and children could no longer go to school. The unemployment rate increased from 3.5% in February 2020 to 14.8% in April 2020, leading to economic instability for many households. As a result, household food insecurity, defined as having limited or inconsistent access to nutritious and affordable food, increased rapidly.

During the first months of 2021, vaccinations began rolling out, more individuals returned to in-person work, children to schools, and restrictions were gradually phased out. Unemployment has decreased since the April 2020 peak to 5.4% in July 2021, but remains above pre-pandemic levels. This brief describes the prevalence of household food insecurity, job disruptions, and food-related behaviors as reported by a nationally representative sample of 1,643 U.S. adults, both in the year prior to the COVID-19 pandemic (March 2019 – March 2020) and during the first four months of 2021 (January – April 2021), a period representing approximately one year since the onset of the pandemic.

Informal caregivers to persons with Alzheimer’s disease (AD) commonly experience high levels of perceived burden, stress, and low quality of life— outcomes that negatively affect the quality of care provided. Yet to be explored are the effects of heart-focused breathing, a self-regulation deep breathing technique, on perceived caregiver burden and heart rate variability (HRV), a measure of autonomic nervous system function. Considering the high attrition rates of many previous in-person AD caregiver interventions, it may be necessary to implement an online intervention to address perceived caregiver burden. This study aimed to test the trends in effects of a 2-week online heart-focused breathing intervention using HeartMath’s Heart Lock-In® technique on perceived caregiver burden, perceived stress, quality of life, anxiety, inner haven, self-compassion, and HRV in a population of AD caregivers. Ten informal AD caregivers participated in the study with five participants randomized into the waitlist control group and five into the intervention group. The intervention group practiced a 10-minute heart-focused breathing protocol using their smart device (i.e., phone) every day for a 2-week period. Participants completed pre- and post- self-report questionnaires online via Google Forms and HRV assessments via the Welltory mobile application. The HRV assessments measured rMSSD, high frequency, and low frequency. The intervention group did not experience improvements related to perceived caregiver burden, perceived stress, anxiety, inner haven or high frequency waves. However, the study results suggest positive trends in quality of life, self-compassion, rMSSD, and low frequency waves among the AD caregivers. Additional research within a larger and more diverse population is needed.
