To date, there have not been any studies in a human population that explore the potential of vinegar ingestion in reducing visceral fat, a common yet serious metabolic disease risk factor. However, previous research in animal models exhibit promising findings, showing that vinegar is effective at reducing visceral fat. This is thought to be due to the activation of AMPK (adenosine monophosphate protein kinase) by acetic acid, the active ingredient in vinegar. The purpose of this study was to identify if this potentially groundbreaking relationship exists in human subjects. Healthy, nonsmoking, sedentary adults between the ages 18-45 y and a waist circumference measurement greater than or equal to 33 inches for women and 38 inches for men were recruited for this study. Twenty-three participants completed this 8-week, parallel arm, randomized control trial that tested the efficacy of red wine vinegar consumption (2 tablespoons red wine vinegar, twice per day, before a meal; providing 3.6 g acetic acid) against a placebo (1 apple cider vinegar pill, twice per day, before a meal; providing 0.0225 g acetic acid) for 8 weeks. Participants were randomized into either the vinegar (VIN) or control (CON) group after being stratified by age, gender, waist circumference, and weight. Results found that the VIN group experienced a 2% decrease in visceral fat (cm3, quantified by a DXA scan), but this change did not differ significantly from that of the CON group (p=0.256). The VIN group also experienced a slight decrease in insulin compared to the CON group, but this change was not significantly different than the control change (p=0.125). However, the change in HOMA-IR trended downward in the VIN group (-16%) as compared to the CON group (+9%) (p=0.079) with a large effect size, 0.153. Other parameters did not show statistically significant results between the groups. Further research is indicated in order to examine the potential of vinegar to reduce visceral fat.

Background: Twenty-four hour urinary sucrose and fructose (24uSF) has been developed as a dietary biomarker for total sugars intake. Collection of 24-h urine is associated with high costs and heavy participant burden, while collection of spot urine samples can be easily implemented in research protocols. The aim of this thesis is to investigate the utility of uSF biomarker measured in spot urine. Methods: 15 participants age 22 to 49 years completed a 15-day feeding study in which they consumed their usual diet under controlled conditions, and recorded the time each meal was consumed. Two nonconsecutive 24-hour urines, where each urine void was collected in a separate container, were collected. Four timed voids (morning, afternoon, evening, and next day) were identified based on time of void and meal time. Urine samples were measured for sucrose, fructose and creatinine. Variability of uSF excretion was assessed by coefficient of variation (%CV) and variance ratios. Pearson correlation coefficient and multiple linear regression were used to investigate the association between uSF in each timed void and corresponding 24uSF excretion. Results: The two-day mean uSF was 50.6 mg (SD=29.5) for the 24-h urine, and ranged from 4.5 to 7.5 mg/void for the timed voids. The afternoon void uSF had the lowest within-subject variability (49.1%), and lowest within- to between-subject variance ratio (0.2). The morning and afternoon void uSF had the strongest correlation with 24-h uSF for both mg/void (r=0.80 and r=0.72) and mg/creatinine (r=0.72 and r=0.67), respectively. Finally, the afternoon void uSF along with other covariates had the strongest predictive ability of 24-h uSF excretion (mg/void) (Adjusted R2= 0.69; p=0.002), whereas the morning void had the strongest predictive ability of 24-h uSF excretion (mg/g creatinine) (adjusted R2= 0.58; p=0.008). Conclusions: The afternoon void uSF had the most favorable reproducibility estimates, strong correlation with 24uSF excretion, and explained greatest proportion of the variability in 24uSF. USF in mg/void may be better to use than uSF in mg/g creatinine as a biomarker in spot urine. These findings need to be confirmed in a larger study, and in a study population with a wide range of sugars intake.

Epidemiological studies have identified obesity as a risk factor for numerous chronic diseases such as adult onset diabetes, hypertension, and hypercholesterolemia. In both humans and laboratory animals, high-fat diets have been shown to cause obesity. Increases in dietary fat lead to increased energy consumption and, consequently, significant increases in body fat content. CD36 has been implicated in fat perception, preference, and increased consumption, but it is yet to be tested using a behavior paradigm. To study the effect of CD36 on fat taste transmission and fat consumption, four CD36 knockout (experimental) mice and four Black 6 wildtype (control) mice underwent 20 days of fat preference and perception testing. Both groups of mice were exposed to foods with progressively increasing fat content (10%, 12.5%, 15% 17.5%, 20%, 45%) in order to assess the effect of CD36 on fat preference. Afterward, the mice were subjected to an aversive conditioning protocol designed to test the effect of CD36 on fat taste perception; development of a conditioned taste aversion was indicative of ability to taste fat. Especially, knockout mice exhibited diminished preference for and reduced consumption of fat during preference testing and were unable to identify fat taste as the conditioned stimulus during aversive conditioning. A repeated measures ANOVA with Bonferroni correction revealed a significant main effect of group on fat consumption, energy intake, and weight. Linear regression revealed CD36 status to account for a majority of observed variance in fat consumption across both phases of the experiment. These results implicate CD36 in fat taste perception and preference and add to the growing body of evidence suggesting fat as a primary taste.

Many natural interventions have been effective at lowering postprandial glucose concentrations (PPG) in research trials and, theoretically, should have favorable effects on the prevention and management of T2DM. Natural interventions include vinegar, nuts and exercise. Green tea has been demonstrated to also possessing antiglycemic effects. Thus, green tea, and its most abundant catechin EGCG, are being consumed for its potential health benefits in cancer prevention and in its inhibitory effects on α-amylase. Many studies have found EGCG to inhibit α-amylase an enzyme needed in the breakdown of carbohydrates (CHO). Other studies have looked at EGCG and its potential for lowering PPG concentrations due to its inhibitory effects on α-amylase in both mice and humans. Yet there is no research on Matcha tea specifically. Matcha tea is green tea in powder form; hence, it is consumed in its entirety unlike traditional teas which are steeped in bags. The purpose of this study was to determine whether Macha tea impacts PPG concentrations in healthy adults. Twelve subjects completed this randomized controlled, single blinded, crossover study. On three separate occasions the twelve subjects consumed a bagel and jam with either water, Lipton green tea, or Macha tea. Fasting blood glucose was taken upon their arrival. Once the tea or water and bagel with jam were consumed PPG concentrations were measured every 30 minutes until 120 minutes were reached. Results showed no statistically significant effects on PPG concentrations in either test groups (p=.960). However, this study did not measure EGCG levels in the tea provided. Therefore, further research should be done with known EGCG amounts to see its effects on PPG concentrations to fully rule out its potential.

Background: Healthy eating plays critical roles in the prevention of many chronic diseases, but there are many barriers in life that prevent people from adopting and maintaining healthy diets. Thus, identifications of barriers that people perceive they have in trying to eat healthy can guide the strategies for dietary behavior change interventions by taking account of the barriers. Objective: The purpose of this study was to identify and quantify the perceived barriers to healthy eating (PBHE), to investigate the relationship between socioeconomic factors and PBHE, and to explore the associations between PBHE and dietary intake among parents of elementary-school aged children living in South Phoenix, AZ. Methods: Socioeconomic factors and PBHEs were obtained via survey and diet was assessed by two interviewer-assisted 24 h diet recalls. The associations between employment and PBHEs, education and PBHEs, and household monthly income and PBHEs were analyzed by Mann-Whitney Test, Kruskal Wallis Test, and Spearman’s correlation test, respectively. The relationship between PBHEs and dietary intake were analyzed by Spearman’s correlation test. Linear regression was used to assess the associations between total PBHE, and dietary intake (including added sugar, fruit and vegetable), adjusted by covariates (including socioeconomic status, birth country, age and gender). Results: Of 149 participants who completed the survey (mean age = 38.47±7.08 y), 136 completed the 24 h diet recalls. The mean reported total, social support, emotions and daily mechanics PBHE scores were 2.63±0.91, 2.52±1.16, 2.71±1.06, and 2.58±0.95, respectively, out of a 5-point scale. Daily fruit, vegetable, sugar-sweetened beverage, sweetened foods, and added sugar intake were reported as 1.66±1.56 servings, 2.45±1.43 servings, 1.19±1.30 servings, 2.02±2.12 servings and 49.93±31.17 g, respectively. Employment status was significantly associated with total PBHE (Z = -2.28, p=0.023), and support PBHE (Z = -2.623, p=0.009). Education was significantly related to total PBHE (χ2 = -7.987, p=0.046), and daily mechanics PBHE (χ2= 11.735, p=0.008). Household monthly income levels were significantly correlated to daily mechanics PBHE (r = -0.265, p=0.005). Added sugar was positively correlated with total PBHE (r=0.202, p=0.020), emotions PBHE (r=0.239, p=0.006), and daily mechanics PBHE (r=0.179, p=0.040). Sugar sweetened beverage intake was significantly related to emotions PBHE (r=0.183, p=0.035). When adjusting for socioeconomic factors in the regression analysis, there was no significant association between PBHE and diet intake. Conclusion: Overall, results suggest PBHEs listed in this study are mainly associated with socioeconomic factors, but they are not related to diet intake. Future studies will focus on the precise role of overcoming some identified barriers in improving healthy eating behaviors, and the causality between barriers and healthy eating.

The true number of food borne illness occurrences that stem from the home is largely unknown, but researchers believe the number is much greater than represented in national data. The focus on food safety has generally been directed at food service establishments, which have made great strides at improving the methods of how their food is prepared. However, that same drive for proper food safety education is lacking in home kitchens, where the majority of food is prepared. Young adults are among some of the riskiest food preparers, and limited research and education methods have been tested on this vulnerable population. This study examined the effect of a basic food safety intervention on consumer food safety knowledge in young adults in the United States (U.S.) over a week period. The study had a pre/post survey design, where participants answered a survey, watched a short 10-minute video, and then recompleted the same survey a week later. Ninety-one participants age 18-29 years completed the initial food safety knowledge questionnaire. Twenty-six of those participants completed both the pre- and post-intervention food safety knowledge questionnaires. A paired t-test was used to analyze changes in questionnaire scores pre/post intervention. The majority of participants were female (78.9%), Arizona State University (ASU) students (78.0%), did not have any formal food safety education (58.2%), prepared a minimum of one meal per week from home (96.7%), and had completed 0-1 college nutrition courses (64.8%). The average overall score for all participants who completed the initial questionnaire was 62.6%. For those that took both the initial questionnaire and the follow up questionnaire (n=26), their scores shifted from 66.8% to 65.5% after the intervention. Scores increased significantly only for one question post-intervention: 38.5% (n=10) to 53.8% (n=14) for the safest method for cooling a large pot of hot soup (p = 0.050). This was the first study of its kind to test a video intervention in attempts to increase food safety knowledge in young adults, and additional studies must be done to solidify the results of this study. Other means of education should be explored as well to determine the best way of reaching this population and others.

According to the CDC, diabetes is the 7th leading cause of death in the U.S. and rates are continuing to rise nationally and internationally. Chronically elevated blood glucose levels can lead to type 2 diabetes and other complications. Medications can be used to treat diabetes, but often have side effects.

According to the CDC, diabetes is the 7th leading cause of death in the U.S. and rates are continuing to rise nationally and internationally. Chronically elevated blood glucose levels can lead to type 2 diabetes and other complications. Medications can be used to treat diabetes, but often have side effects. Lifestyle and diet modifications can be just as effective as medications in helping to improve glycemic control, and prevent diabetes or improve the condition in those who have it. Studies have demonstrated that consuming vinegar with carbohydrates can positively impact postprandial glycemia in diabetic and healthy individuals. Continuous vinegar intake with meals may even reduce fasting blood glucose levels. Since vinegar is a primary ingredient in mustard, the purpose of this study was to determine if mustard consumption with a carbohydrate-rich meal (bagel and fruit juice) had an effect on the postprandial blood glucose levels of subjects. The results showed that mustard improved glycemia by 17% when subjects consumed the meal with mustard as opposed to the control. A wide variety of vinegars exists. The defining ingredient in all vinegars is acetic acid, behind the improvement in glycemic response observed with vinegar ingestion. Vinegar-containing foods range from mustard, to vinaigrette dressings, to pickled foods. The benefits of vinegar ingestion with carbohydrates are dose-dependent, meaning that adding even small amounts to meals can help. Making a conscious effort to incorporate these foods into meals, in addition to an overall healthy lifestyle, could provide an additional tool for diabetics and nondiabetics alike to consume carbohydrates in a healthier manner.

The aim of this paper is to investigate a few of the primary pillars of the Paleo diet for evidence to either support or refute their efficacy and safety such that a more educated decision can be made by lay-persons who are wishing to make improvements in their overall health via dieting. To accomplish this goal a basic overview of The Paleo Diet (also known to some as the Paleolithic Nutrition Movement) is given based on the writings of Dr. Loren Cordain in his book The Paleo Diet. Next, analyses of a few of the basic characteristics of the diet are presented based on an in-depth literature review that was performed using PubMed (Medline), Cochrane and Google Scholar databases until March of 2015. The findings of this investigation raise concerns with respect to the safety of some of the main principles of the diet such as its high protein, low carbohydrate content that is relies heavily on the consumption of red meat. The current literature on what the diet of the people of the Paleolithic era may have consisted of is also presented in order to shed light on the origins of the diet and see how closely the diet prescribed The Paleo Diet meshes with the most current data on the topic.

The purpose of this study was to determine the ratio of vegetable to fruit incorporated during a fresh vegetable and/or fruit juice diet. Juicing is the process of extracting the liquid part of a plant, fruit, or vegetable. Food can be ground, pressed, and spun to separate the liquid from the pulp. A juice diet involves juicing and consuming a variety of vegetables and fruits. The primary objective of this study was to gather information about the ratio of vegetable to fruit incorporated in freshly made juices during a juice diet. Therefore, the study survey inquired about various topics related to ingredient ratio during a juice diet. The survey data allowed for examination of the relationships between ingredient ratio and certain variables (e.g. gender, age, length of time juicing, juice fast participation, health effects, etc.). The study participants were recruited using online social media. Facebook was the primary method for reaching the online juicing community. A written invitation was distributed in several health related Facebook groups encouraging any person with experience juicing to complete an anonymous survey. This post was also shared via Twitter and various health related websites. The study survey data was used to examine the relationships between ingredient ratio and specific variables. The survey data showed participants had varying levels of experience with juicing. The responses indicated many participants were familiar with juice fasting and many participants completed more than one juice fast. Based on the survey response data, the most common ratio of vegetable to fruit incorporated by the participants during a juice diet was 80% vegetable to 20% fruit. The majority of participants indicated daily consumption of freshly made juice containing 70% -100% vegetables. Based on the survey response data, beginner juicers may be less inclined to incorporate organic produce into their juice diet compared to advanced juicers. The majority of participants reported positive health benefits during a juice diet. Some of the positive health benefits indicated by participants include weight loss, increased energy, and a positive impact on disease symptoms. Some of the negative side effects experienced by participants during a juice diet include frequent urination, headache, and cravings. Cross tabulation calculations between the ratio of ingredients and several variables covered by the study survey demonstrated statistical significance (i.e. length of time juicing, frequency of drinking juice, juice fast participation, number of juice fasts completed, servings of vegetables/fruit in a juice, percent of organic vegetables/fruit used in a juice, perceived positive side effects, and perceived negative side effects). This study provided insight about the average ratio of vegetable to fruit incorporated by participants during a juice diet. When analyzing the data it is important to consider the survey data was self-reported. Therefore, every result and conclusion is based on the individual perceptions of the study participants. In future experimentation, the use of medical tests and blood work would be useful to determine the biological and biochemical effects of drinking raw vegetable and/or fruit juice on the human body.

Background. Research suggests that fish oil can be used as an intervention to increase clotting times and reduce the risk of cardiovascular diseases.
Objective. The purpose of this study is to examine the effects of fish oil supplementation on blood coagulation parameters in adults with blood type A (BTA) compared to blood type O (BTO) over an eight-week intervention.
Design. The study was a randomized, double-blind dietary intervention using healthy adults with blood types A or O. A total of 18 participants completed the study. Subjects were randomized into two groups: an experimental group (fish oil) made up of 7 BTO and 4 BTA adults, and a control group (coconut oil) made up of 4 BTO and 3 BTA adults. Non-fasting blood was drawn and analyzed for prothrombin time (PT), activated partial thromboplastin time (PTT), and international normalized ratio (INR) at weeks 0 and 8. A food frequency questionnaire was completed at week 0, and anthropometric data collected at weeks 0 and 8.
Results. Baseline PTT results differed significantly between blood types, 28.1±1.4 seconds and 29.7±1.3 seconds for BTA and BTO respectively (p<0.05). Physical activity differed significantly between the experimental and control group at baseline, 53.9±26.8 METS and 86.0±41.9 METS, respectively (p<0.05). In the Fish oil group, prothrombin time increased for BTA vs. BTO, 0.18±0.29 seconds vs -0.11±0.31 seconds respectively (p<0.10indicating a statistical trend). There were no other differences between groups for the other outcome variables.
Conclusion. Fish oil supplementation prolonged clotting time in BTA adults and may be a useful strategy in this population for reducing cardiovascular disease risk. More research is needed to verify and expand these results.
