Farmers' markets are a growing trend both in Arizona and the broader U.S., as many recognize them as desirable alternatives to the conventional food system. As icons of sustainability, farmers' markets are touted as providing many environmental, social, and economic benefits, but evidence is mounting that local food systems primarily serve the urban elite, with relatively few low-income or minority customers. However, the economic needs of the market and its vendors often conflict with those of consumers. While consumers require affordable food, farmers need to make a profit. How farmers' markets are designed and governed can significantly influence the extent to which they can meet these needs. However, very little research explores farmers' market design and governance, much less its capacity to influence financial success and participation for underprivileged consumers. The present study examined this research gap by addressing the following research question: How can farmers' markets be institutionally designed to increase the participation of underprivileged consumers while maintaining a financially viable market for local farmers? Through a comparative case study of six markets, this research explored the extent to which farmers' markets in Central Arizona currently serve the needs of farmer-vendors and underprivileged consumers. The findings suggest that while the markets serve as a substantial source of income for some vendors, participation by low-income and minority consumers remains low, and that much of this appears to be due to cultural barriers to access. Management structures, site characteristics, market layout, community programs, and staffing policies are key institutional design features, and the study explores how these can be leveraged to better meet the needs of the diverse participants while improving the markets' financial success.

In October, 2009, participants of the Arizona Special Supplemental Nutrition Program for Women, Infants and Children (WIC) began receiving monthly Cash Value Vouchers (CVV) worth between six and 10 dollars towards the purchase of fresh fruits and vegetables. Data from the Arizona Department of Health Services (ADHS) showed CVV redemption rates in the first two years of the program were lower than the national average of 77% redemption. In response, the ADHS WIC Food List was expanded to also include canned and frozen fruits and vegetables. More recent data from ADHS suggest that redemption rates are improving, but variably exist among different WIC sub-populations. The purpose of this project was to identify themes related to the ease or difficulty of WIC CVV use amongst different categories of low-redeeming WIC participants. A total of 8 focus groups were conducted, four at a clinic in each of two Valley cities: Surprise and Mesa. Each of the four focus groups comprised one of four targeted WIC participant categories: pregnant, postpartum, breastfeeding, and children with participation ranging from 3-9 participants per group. Using the general inductive approach, recordings of the focus groups were transcribed, hand-coded and uploaded into qualitative analysis software resulting in four emergent themes including: interactions and shopping strategies, maximizing WIC value, redemption issues, and effect of rule change. Researchers identified twelve different subthemes related to the emergent theme of interactions and strategies to improve their experience, including economic considerations during redemption. Barriers related to interactions existed that made their purchase difficult, most notably anger from the cashier and other shoppers. However, participants made use of a number of strategies to facilitate WIC purchases or extract more value out of WIC benefits, such as pooling their CVV. Finally, it appears that the fruit and vegetable rule change was well received by those who were aware of the change. These data suggest a number of important avenues for future research, including verifying these themes are important within a larger, representative sample of Arizona WIC participants, and exploring strategies to minimize barriers identified by participants, such as use of electronic benefits transfer-style cards (EBT).

The health benefits of physical activity are widely accepted. Emerging research also indicates that sedentary behaviors can carry negative health consequences regardless of physical activity level. This dissertation explored four projects that examined measurement properties of physical activity and sedentary behavior monitors. Project one identified the oxygen costs of four other care activities in seventeen adults. Pushing a wheelchair and pushing a stroller were identified as moderate-intensity activities. Minutes spent engaged in these activities contribute towards meeting the 2008 Physical Activity Guidelines. Project two identified the oxygen costs of common cleaning activities in sixteen adults. Mopping a floor was identified as moderate-intensity physical activity, while cleaning a kitchen and cleaning a bathtub were identified as light-intensity physical activity. Minutes spent engaged in mopping a floor contributes towards meeting the 2008 Physical Activity Guidelines. Project three evaluated the differences in number of minutes spent in activity levels when utilizing different epoch lengths in accelerometry. A shorter epoch length (1-second, 5-seconds) accumulated significantly more minutes of sedentary behaviors than a longer epoch length (60-seconds). The longer epoch length also identified significantly more time engaged in light-intensity activities than the shorter epoch lengths. Future research needs to account for epoch length selection when conducting physical activity and sedentary behavior assessment. Project four investigated the accuracy of four activity monitors in assessing activities that were either sedentary behaviors or light-intensity physical activities. The ActiGraph GT3X+ assessed the activities least accurately, while the SenseWear Armband and ActivPAL assessed activities equally accurately. The monitor used to assess physical activity and sedentary behaviors may influence the accuracy of the measurement of a construct.

Advancing sustainable food systems requires holistic understanding and solutions-oriented approaches that transcend disciplines, so expertise in a variety of subjects is necessary. Proposed solutions are usually technically or socially oriented, but disagreement over the best approach to the future of food dominates the dialogue. Technological optimists argue that scientific advances are necessary to feed the world, but environmental purists believe that reductions in consumption and waste are sufficient and less risky. Life cycle assessment (LCA) helps resolve debates through quantitative analysis of environmental impacts from products which serve the same function. LCA used to compare dietary choices reveals that simple plant-based diets are better for the environment than diets that include animal products. However, analysis of soy protein isolate (SPI) demonstrates that certain plant-based proteins may be less preferable for the environment than some unprocessed meats in several categories due to additional impacts that come from industrial processing. LCAs' focus on production risks ignoring consumers, but the food system exists to serve consumers, who can be major drivers of change. Therefore, the path to a sustainable food system requires addressing consumption issues as well. Existing methods for advancing sustainable food systems that equate more information with better behavior or performance are insufficient to create change. Addressing food system issues requires sufficient tacit knowledge to understand how arguments are framed, what the supporting content is, the findings of primary sources, and complex and controversial dialogue surrounding innovations and interventions for food system sustainability. This level of expertise is called interactional competence and it is necessary to drive and maintain holistic progress towards sustainability. Development strategies for interactional competence are informed by studying the motivations and strategies utilized by vegans. A new methodology helps advance understanding of expertise development by assessing levels of expertise and reveals insights into how vegans maintain commitment to a principle that influences their daily lives. The study of veganism and expertise reveals that while providing information to debunk fallacies is important, the development of tacit knowledge is fundamental to advance to a stage of competence.

Most American children consume less than the recommend amount of fruits and vegetables (F&V), 74% and 84%, respectively. Eating too few F&V in childhood is associated with increased risk of cardiovascular disease, hypertension, respiratory symptoms, and some cancers later in life. Adequate F&V consumption favorably impacts antioxidant status, gut flora, mood, and cognitive functioning. Nutrients such as vitamin C and fiber are only naturally occurring in plant foods. For many children, school lunches are an important source of F&V. This pilot study assessed the feasibility of providing condiments to increase children’s consumption of salad bar F&V in an elementary school cafeteria at lunchtime. The trial site was a single Title 1 elementary school in a large, urban district in the greater Phoenix metropolitan area. Taste tests were conducted on three convenience samples of children in grades 3 – 7, aged 8 – 12 years (n=57) to identify the most popular condiment flavors. The five highest rated flavors were made available daily at a “flavor station” in the school’s lunchroom for three consecutive weeks during the Fall 2018 semester. Descriptive and inferential statistics were used to analyze data. A cost analysis was conducted for capital outlays related to the flavor station. School employee perceptions of F&V and the flavor station were assessed via posttest online surveys. Peanut butter was rated the best tasting condiment by children and was the only condiment that increased in popularity throughout the intervention. Overall, daily F&V consumption increased 17 g per child. There was a linear increase in F&V consumption during the study (r=0.986; P=0.014). As a proportion of the total F&V selected, F&V waste decreased by nearly 3%. The average daily cost of providing the flavor station was $0.09 per student. Sixty-five percent of school staff felt that the flavor station should continue at their school. Peanut butter is an affordable, nutrient-dense food that accommodates the USDA Food and Nutrition Service meal patterns and nutrition standards, and thus, is a viable strategy for increasing F&V consumption and decreasing F&V waste. The results herein inform the development of future interventions to improve the palatability of F&V for children.

Mobile healthy food retailers are a novel alleviation technique to address disparities in access to urban produce stores in food desert communities. Such retailers, which tend to exclusively stock produce items, have become significantly more popular in the past decade, but many are unable to achieve economic sustainability. Therefore, when local and federal grants and scholarships are no longer available for a mobile food retailer, they must stop operating which poses serious health risks to consumers who rely on their services.

To address these issues, a framework was established in this dissertation to aid mobile food retailers with reaching economic sustainability by addressing two key operational decisions. The first decision was the stocked product mix of the mobile retailer. In this problem, it was assumed that mobile retailers want to balance the health, consumer cost, and retailer profitability of their product mix. The second investigated decision was the scheduling and routing plan of the mobile retailer. In this problem, it was assumed that mobile retailers operate similarly to traditional distribution vehicles with the exception that their customers are willing to travel between service locations so long as they are in close proximity.

For each of these problems, multiple formulations were developed which address many of the nuances for most existing mobile food retailers. For each problem, a combination of exact and heuristic solution procedures were developed with many utilizing software independent methodologies as it was assumed that mobile retailers would not have access to advanced computational software. Extensive computational tests were performed on these algorithm with the findings demonstrating the advantages of the developed procedures over other algorithms and commercial software.

The applicability of these techniques to mobile food retailers was demonstrated through a case study on a local Phoenix, AZ mobile retailer. Both the product mix and routing of the retailer were evaluated using the developed tools under a variety of conditions and assumptions. The results from this study clearly demonstrate that improved decision making can result in improved profits and longitudinal sustainability for the Phoenix mobile food retailer and similar entities.

Research demonstrates that the contemporary global food system is unsustainable, and moreover, because some groups carry the burden of that unsustainability more than others, it is unjust. While some threads of food activism in the United States have attempted to respond to these structural based inequalities--primarily those of race, ethnicity, and social class--overall, very little domestic activism has focused on issues of gender. As feminist scholarship makes clear, however, a food movement "gender gap" does not mean that gender is irrelevant to food experiences, social activism, or agricultural sustainability. Building on a framework of feminist food studies, food justice activism, and feminist social movement theory, this dissertation makes the case for "(en)gendering" the domestic alternative food activist movement, first by demonstrating how gender shapes experiences within food movement spaces, and second, by exploring the impact that an absence of gender awareness has on the individual, community, and organizational levels of the movement. Employing a feminist-informed hybrid of grounded theory and social movement research methods, field research for this dissertation was conducted in community gardens located in Seattle, Washington and Phoenix, Arizona during the summers of 2011 and 2012. With the assistance of NVivo qualitative data analysis software, field notes and twenty-one key-informant interviews were analyzed, as were the discourses found in the publically available marketing materials and policies of domestic food justice organizations. This study's findings at the individual and community level are hopeful, suggesting that when men are involved in food movement work, they become more aware of food-based gender inequalities and more supportive of women's leadership opportunities. Additionally, at the organizational level, this study also finds that where food sovereignty is influencing domestic activism, gender is beginning to enter the discussion. The project concludes with policy recommendations for both community gardening and food justice organizations and the detailing of a new concept of "feminist food justice", with the end goal of preventing the food movement from undermining its own potential to secure a "real alternative" to corporate industrial agriculture.

It is commonly accepted that undergraduate degree attainment rates must improve if postsecondary educational institutions are to meet macroeconomic demands. Involvement in co-curricular activities, such as student clubs and organizations, has been shown to increase students' satisfaction with their college experience and the rates by which they might persist. Yet, strategies that college administrators, faculties, and peer leaders may employ to effectively promote co-curricular engagement opportunities to students are not well developed. In turn, I created the Sky Leaders program, a retention-focused intervention designed to promote commuter student involvement in academically-purposeful activities via faculty- and peer-lead mentoring experiences. Working from an interpretivist research paradigm, this quasi-experimental mixed methods action research study was intended to measure the intervention's impact on participants' re-enrollment and reported engagement rates, as well as the effectiveness of its conceptual and logistical aspects. I used enrollment, survey, interview, observation, and focus group data collection instruments to accommodate an integrated data procurement process, which allowed for the consideration of several perspectives related to the same research questions. I analyzed all of the quantitative data captured from the enrollment and survey instruments using descriptive and inferential statistics to explore statistically and practically significant differences between participant groups. As a result, I identified one significant finding that had a perceived positive effect. Expressly, I found the difference between treatment and control participants' reported levels of engagement within co-curricular activities to be statistically and practically significant. Additionally, consistent with Glaser and Strauss' grounded theory approach, I employed open, axial, and selective coding procedures to analyze all of the qualitative data obtained via open-ended survey items, as well as interview, observation, and focus group instruments. After I reviewed and examined the qualitative data corpus, I constructed six themes reflective of the participants' programmatic experiences as well as conceptual and logistical features of the intervention. In doing so, I found that faculty, staff, and peer leaders may efficaciously serve in specific mentoring roles to promote co-curricular engagement opportunities and advance students' institutional academic and social integration, thereby effectively curbing their potential college departure decisions, which often arise out of mal-integrative experiences.

ABSTRACT

Background. College students’ modifiable health behaviors, including unhealthful eating patterns, predispose them to risk for future cardiometabolic conditions.

Purpose. This novel 8-week randomized control parallel-arm study compared the effects of a daily 18-hour Time-Restricted Feeding protocol vs. an 8-hour fast on diet quality in college students. Secondary outcomes were resting morning blood pressure, biomarkers of glucose regulation, biomarkers of lipid metabolism, and anthropometric measures.

Methods. Eighteen healthy college students (age = 23 ± 4 years; BMI = 23.2 ± 2.3 kg/m2; MET = 58.8 ± 32.9 min/wk) completed this study. Participants were randomized to a daily 18-hour fasting protocol (Intervention; n = 8) or a daily 8-hour fasting protocol (Control; n = 10) for eight weeks. One ‘cheat’ day was permitted each week. Outcomes were measured at weeks 0 (baseline), 4, and 8. A non-parametric Mann Whitney U test was used to compare the week 4 change from baseline between groups. Statistical significance was set at p≤0.05.

Results. Diet quality (p = 0.030) and body weight (p = 0.016) improved from baseline to week 4 for the INV group in comparison to the CON group. The data suggest these improvements may be related to reductions in snacking frequency and increased breakfast consumption. Fasting blood glucose and hip circumference tended to improve for the INV group in comparison to the CON group (p = 0.091 and p = 0.100). However, saturated fat intake tended to increase in the INV group in comparison to the CON group (p = 0.064). Finally, there were no treatment differences between groups (p>0.05) for the 4-week change in total calories, dietary vitamin C, added sugars, resting systolic blood pressure, resting diastolic blood pressure, insulin, homeostatic model assessment for insulin resistance (HOMA-IR), low-density lipoprotein (LDL) cholesterol, triglycerides, high-density lipoprotein (HDL) cholesterol, waist circumference, or MET.

Conclusion. These data, although preliminary, suggest that the 18-hour fasting protocol was effective for improving diet quality and reducing weight in comparison to the 8-hour fasting protocol in healthy college students. Future intervention trials will need to confirm these findings and determine the long-term relevance of these improvements for health outcomes.
