There are two goals for this honors student project: (1) to determine (using an online survey) what college students do and do not know about cooking and preparing foods and (2) to video record short demonstrations of several cooking skills that college students lack the most based on survey responses.

There are two goals for this honors student project: (1) to determine (using an online survey) what college students do and do not know about cooking and preparing foods and (2) to video record short demonstrations of several cooking skills that college students lack the most based on survey responses. Ultimately, this project hopes to help students develop skills they can use in the kitchen to encourage more cooking at home and less eating out, dietary changes that should lead to more healthful meals and a healthier population. In 2004, the South Korean geneticist Woo-Suk Hwang published what was widely regarded as the most important research result in biotechnology of the year. In the prestigious American journal Science, he claimed that he had succeeded in cloning a human blastocyst, an embryo in its early stages (Hwang et al. 2004). A year later, in a second Science article, he made the earth-shattering announcement that he had derived eleven embryonic stem cell lines using his cloning technique (Hwang et al. 2005). The international scientific community was stunned. American scientists publicly fretted that President George W. Bush‘s 2001 executive order limiting federal funding for stem-cell research in the United States had put American bioscience behind the Koreans‘ (Paarlberg 2005). These breakthroughs offered potential solutions to immune system rejection of transplanted organs and possible cures for diseases such as rheumatoid arthritis, Parkinson‘s, Down‘s syndrome, and paralysis (Svenaeus 2007). However, within a year, Hwang was exposed as a fraud who had faked his results and pressured his female colleagues to donate eggs without informed consent. Despite protests against his methods from Korean religious and nongovernmental organizations, Hwang had used his prestige to ignore his ethical obligations. The Korean government, too, was slow to investigate Hwang and to subject his work to appropriate regulation.

Affecting over 34 million people worldwide, (0.5% of the world population) HIV/AIDS is a pandemic that is not receding its control anytime soon (Sidibe 2011). Thirty years since the chaotic emergence of fear and misunderstanding, our knowledge of the virus and its subsequent syndrome has grown exponentially, but how much of this information is really getting to the people that need it? In the corners of the Earth, where scientific knowledge rarely reaches, what can we do to stop the deadly spread of this virus? And what of the countries with a large amount of knowledge, but still a ravaging problem present in their countries? When this information is disseminated- sometimes a matter of ‘if’ in certain countries, it is primarily through unreliable sources, most of the countries examined through the media, which has a tendency to skew and misinterpret information-specially scientific. This is the information that enters the lives of people in several different countries, for example, the United States, France, China, Brazil, Uganda, and South Africa: Misunderstandings of how to protect themselves from the virus, and its effects on the body. These misunderstandings have led to millions of lives lost as myths such as showering to cure AIDS and that AIDS only infect the ‘sinners’ continue to surface throughout the globe. The Public Health threat is due to knowledge deficits, and incorrect perceived ‘knowledge’ and ‘awareness of the problem’. Here, in a six-country analysis of common misconceptions and the subsequent policies and prevalence rate, it has begun to be clear that the hardest hit areas are those with the most stigma, the most misguided policies, the most uninformed leadership, and because of this, the most mislead citizens. The biological misunderstandings of HIV/AIDS are at the root of the public health threat continuing to keep its hold in the modern world, 30 years after its documented outbreak.

The aim of this study is to understand the affects of grip strength and manual dexterity in activities of daily living (ADL) in persons with Down syndrome (DS). This is important because it could help with future interventions that are focused around improving related disadvantages in this particular population. Ten participants with DS performed the manual dexterity tests (i.e., Purdue Pegboard) and measured their grip strength with a hydraulic dynamometer. Overall, grip strength was lower than the average for the typical population and was reduced after aeorbic exercise. Improvements, however, were found in their manual dexterity from pre-test to post-test. This indicates that the assisted moderate intensity exercise intervention helped their dexterity performance. The improvements in dexterity are consistent with previous research conducted by Ringenbach et al. (2007). These results suggest that a moderate intensity treadmill walking exercise intervention can increase precision and efficiency in dexterity in persons with Down syndrome, however their grip force production may be stimulated by another means.

College students who may be living on their own for the first time are faced with a slew of new challenges, which include making healthy lifestyle choices. The purpose of this study involves investigating how well Arizona State University freshmen students take care of their health (regarding nutrition, purposeful exercise, alcohol consumption and sleep patterns) compared to other college freshmen throughout the United States. This study used data from the ASU Wellness department and the American College Health Association (ACHA) to compare these aspects of health and find out which areas ASU health promotions efforts should focus on to help educate freshmen and improve their health for the future. The writer also researched past studies to find the best ways to communicate health information to college freshmen via online media. Findings indicate both ASU freshmen and students from various U.S. universities fall short of meeting current health recommendations, and a need exists for further research to identify the best practices to effectively reach these students through the Internet and commonly used online platforms.

The NCAA recently declared sickle cell trait (SCT) to be a risk factor for sudden illness and death among student athletes. Fetal hemoglobin (HbF) concentration in adults is negatively correlated with disease severity in sickle cell anemia, although its effect on SCT is not fully understood and the concentration is found to have high variability across populations. Two single nucleotide polymorphisms (SNPs) at the human beta globin gene cluster, rs7482144 and rs10128556, contribute to the heritable variation in HbF levels and are associated with increased HbF concentrations in adults. A sample population of NCAA football student athletes was genotyped for these two polymorphisms, and their allele frequencies were compared to those of other populations. The minor allele of both polymorphisms had allele frequencies of 0.091 in the sample population, which compared closely with other populations of recent African heritage but was significantly different from European populations. The results of this study will be included in a larger study to predict whether these among other polymorphisms can be used as markers to predict susceptibility to heat-related emergencies in NCAA student athletes with SCT, although the small sample size will delay this process until participation in the study increases. Since both rs7482144 and rs10128556 exhibit high levels of linkage disequilibrium, and as their contributions to the heritable variability of HbF concentrations tend to differ greatly between populations of different ancestry, further investigations should be aimed at distinguishing between the effects of each SNP in African American, European, and other populations represented in NCAA football before conclusions can be drawn as to their practical use as genetic markers of heat susceptibility in student athletes with SCT.

Protein is an essential macronutrient in the human diet, but the source of this protein has both human health and environmental impacts. Health complications can result from protein deficiency, but the practices by which protein sources are raised, grown, or harvested have environmental consequences, potentially reducing biodiversity, essential habitat, and crucial stocks of natural resources. Terrestrial cultivation encroaches on natural habitats and consumes resources inefficiently, while overfishing has greatly depleted wild fishery stocks. These environmental factors, along with concerns about nutrients, contaminants and the ethics of animal protein has led to confusion about weighing the risks and benefits associated with alternative sources of protein. Providing consumers \u2014 and policy makers \u2014 with a comprehensive account of major protein sources and their impacts in an understandable form is crucial to reducing environmental degradation and improving human health. Here I provide a general framework to compare the health and environmental impacts of livestock, seafood, and plant protein, and illustrate the application of this framework with case studies for each of these categories.

Dancers tend to injure the anterior cruciate ligament in their left leg more often than the right. It is unclear whether this trend is due to biased choreography or if leg dominance and left versus right asymmetries are contributing factors. The purpose of this study was to investigate asymmetries between the left and right leg, in knee abduction during landing, hip external rotation (ER) and internal rotation (IR) strength, and hip ER and IR range of motion in dancers compared to non-dancers. This study aimed to determine whether these asymmetries can be linked to leg dominance, and if this puts one leg at higher risk for ACL injury. Ten dancers and eleven non-dancers performed three maximal effort countermovement vertical jumps off of two feet, as well as three maximal effort single leg jumps on each leg. Knee abduction angles during the landing phase of the jumps were calculated using motion capture data. Maximum isometric hip ER and IR strength was measured at 15, 30, 45, 60, and 90 of knee flexion, and hip ER and IR range of motion was measured at 90 of knee flexion. Contrary to the hypothesis, few significant differences were found between the left and right leg, as well as between dancers and non-dancers. Dancers exhibited significantly greater IR range of motion than non-dancers, and knee abduction angles were greater on the right than left leg during double leg jumps. This opposes the hypothesis that knee abduction angles would be greater in dancers on the left leg. However, significant positive correlations were found
between IR strength and knee abduction angles during single leg jumps on the left leg, suggesting that IR strength may be a contributing factor to knee valgus. Further studies may want to utilize qualitative analyses, more relevant jumping tasks, and a different marker set to elucidate asymmetries of the lower limbs that may truly be present.

Introduction/Purpose: This paper describes the process of the community needs assessment phase of program implementation for the Student Health Outreach for Wellness (SHOW) clinic. Homeless individuals are more likely (than non homeless individuals) to experience serious illness, depression and mental illness. Access to health care has been identified as a barrier to receiving appropriate health care to manage the diseases and conditions clients may have. SHOW's vision is to operate on Saturdays utilizing Health Care for the Homeless (HCH) to offer extended primary health care hours, along with offering health promotion programming to address the biopsychosocial components of their health. Ultimately, this aims to reduce the homeless population's need to visit emergency room departments for non- urgent, primary care visits. Methods: To validate the need for this clinic's operation of programming and health services, a community needs assessment was conducted to collect data about the population's current health status. Forty-three people (n=43) ages 20-76 (M = 44.87) were surveyed by a trained research team using interview questionnaires. Results: The results show a prevalence of self\u2014reported physical and behavioral conditions, and support that this population would benefit from extended hours of care. Mental and behavioral health conditions are the most prevalent conditions (with the highest rates of depression (41.86%) and anxiety disorder (32.56%)), followed by the common cold (23.36%) and back pain (16.28%). The average reported emergency department (ED) visits within the past six months was 1.18 times. Almost everyone surveyed would visit a free medical clinic on the Human Services Campus (HSC) staffed by health staff and health professional students on the weekends (93.18%). Conclusion: Overall, the community needs assessment conducted for SHOW supports the need for weekend access to health care facilities and an interest in health programming for this population.
