Fruit and vegetable (FV) consumption continues to lag far behind US Department of Agriculture (USDA) recommendations. Interventions targeting individuals' dietary behaviors address only a small fraction of dietary influences. Changing the food environment by increasing availability of and excitement for FV through local food production has shown promise as a method for enhancing intake. However, the extent to which local production is sufficient to meet recommended FV intakes, or actual intakes, of specific populations remains largely unconsidered. This study was the first of its kind to evaluate the capacity to support FV intake of Arizona's population with statewide production of FV. We created a model to evaluate what percentage of Dietary Guidelines for Americans (DGA) recommendations, as well as actual consumption, state-level FV production could meet in a given year. Intake and production figures were amended to include estimates of only fresh, non-tropical FV. Production was then estimated by month and season to illustrate fluctuations in availability of FV. Based on our algorithm, Arizona production met 184.5% of aggregate fresh vegetable recommendations, as well as 351.9% of estimated intakes of Arizonans, but met only 29.7% of recommended and 47.8% of estimated intake of fresh, non-tropical fruit. Much of the excess vegetable production can be attributed to the dark-green vegetable sub-group category, which could meet 3204.6% and 3160% of Arizonans' aggregated recommendations and estimated intakes, respectively. Only minimal seasonal variations in the total fruit and total vegetable categories were found, but production of the five vegetable sub-groups varied between the warm and cool seasons by 19-98%. For example, in the starchy vegetable group, cool season (October to March) production met only 3.6% of recommendations, but warm season (April to November) production supplied 196.5% of recommendations. Results indicate that Arizona agricultural production has the capacity to meet a large proportion of the population's FV needs throughout much of the year, while at the same time remaining a major producer of dark-green vegetables for out-of-state markets.

The Rapid Eating and Activity Assessment for Participants Short Version (REAP-S), represents a method for rapid diet quality assessment, however, few studies have tested its validity. The Healthy Eating Index-2005 (HEI-2005) and the Diet Quality Index Revised (DQI-R) are tools that effectively assess diet quality, however, both are complex and time consuming. The objective of this study was to evaluate the validity of the REAP-S against the HEI-2005 and the DQI-R. Fifty males, 18 to 33 years of age, completed the REAP-S as well as a 24-hour diet recall. HEI-2005 and DQI-R scores were determined for each 24-hour recall. Scores from the REAP-S were evaluated against the HEI-2005 and DQI-R scores using Spearman rank order correlations and chi square. Modifications were also made to the original method of scoring the REAP-S to evaluate how the correlations transformed when certain questions were removed. The correlation coefficient for REAP-S and the HEI-2005 was 0.367 (P=0.009), and the correlation coefficient for REAP-S and the DQI-R was 0.323 (P=0.022). Chi square determined precision of the REAP-S to the HEI-2005 for overall diet quality at 64% and 62% for the DQI-R and REAP-S. Scores that were considered extreme (n=21) by the HEI-2005 (scores <40 and >60) had 76% precision with REAP-S. The correlation for the modified version of scoring REAP-S with the overall HEI-2005 and DQI-R were 0.395 (P=0.005) and 0.417 (P=0.003) respectively. Chi square statistics revealed the REAP-S accurately captured the diets of high quality versus low quality with 64% precision to the HEI-2005 and 62% of the DQI-R. When evaluating the modified REAP-S scores against the extreme HEI-2005 scores, precision increased to 81%. It appears the REAP-S is an acceptable tool to rapidly assess diet quality. It has a significant, moderate correlation to both the HEI-2005 and the DQI-R, with strong precision as well. Both correlation and precision is strengthened when values are compared to only the extreme scores of the HEI-2005; however, more research studies are needed to evaluate the validity of REAP-S in a more diverse population and to evaluate if changes to select questions can improve its accuracy in assessing diet quality.

The evaluation of nutritional status by dietary intake assessment is fundamental to nutrition research. Accurate assessment allows for health professional-moderated diet adjustment in order to promote disease prevention and management. However, dietary intake can be extremely challenging to measure properly as reliability and accuracy are essential. As technology use has become more prevalent in recent years, an assortment of online, web-based diet analysis methods have begun to emerge. Are these modern methods as accurate as the traditional methods? The aim of this study was to compare and contrast diet analyses from a feeding trial in which both subject-coded (using the Automated Self Administered 24 hour recall, or the ASA24) and investigator-coded (using the Food Processor diet analysis program) diet records were available. Sixty-four overweight (body mass index >27-40 kg/m2) members of a campus community between the ages of 20-45 were recruited for an 8-week parallel arm, randomized controlled trial to evaluate the impact of two different pre-dinner meal snacks on satiety, calories consumed, and contribution to modest weight loss. As part of the study requirements, participants completed 3-day food logs at four different times during the trial: pre-trial, and week 1, 4, and 8. Participants also entered their dietary information into the ASA24 website the day after the intake was recorded by hand. Nutrient intake values were compared between the ASA24 records and the handwritten food logs. All statistical analyses were performed using SPSS Statistical Analysis version 19.0; bivariate analyses and Spearman correlation analyses were utilized. Energy, macronutrient, and micronutrient intakes did correlate significantly between the two methodologies, though both under-reporting and over-reporting were found to exist. Carbohydrate and fiber intakes were under-reported by subjects; retinol, beta-carotene, and vitamin C amounts were over-reported. These results are consistent with previous findings in reporting differences and suggest that the ASA24 is a comparably accurate dietary tracking tool to the traditional diet record method.

As a college student, living in an apartment or home with a kitchen, making your own food decisions can be daunting. After spending so much time either living at home and having food cooked for you or living in a dorm where food is provided, it is difficult to suddenly have to put so much thought into something that for so long you didn’t have to think about at all. Not only that, it sometimes feels like the media is screaming from all sides that you need to eat a certain way to be ‘healthy’ or ‘fit’. I hope to be able to make this process a bit easier for you through this guide I have put together from my own experience and education.
‘Healthy’ foods always seem like the best choice, but what does it really mean to be healthy? A ‘healthy diet’ can mean any number of things depending on who you ask and where you look. Media provides an endless sea of tips, tricks, and diets for ‘eating healthy’. Oxford defines health as a state of physical, mental, and social well-being with the absence of disease and infirmity; and healthy as indicative of, conducive to, or promoting good health1. It is easy to get caught up in the excitement of fad diets, but maintaining a healthy eating pattern can be quite simple when put into practice.

Objectives. To determine the association between parental level of acculturation using the Anglo Orientation Subscale (AOS) and the Mexican Orientation Subscale (MOS) derived from the Acculturating Rating Scale for Mexican Americans-II (ARSMA II) and their likelihood of serving green salad, vegetables, fruit, 100% fruit juice, and sugar-sweetened beverages during family meals. Methods. A sample of Hispanic parents of 6th, 7th, or 8th-grade adolescents (n=447; 39.8±6.8 years; 89.7% female) enrolled in a parenting intervention promoting healthy nutrition and substance use prevention. Parents completed baseline surveys to self-report whether they had family meals or not, acculturation-related questions, and the frequency with which they serve green salad, vegetables, fruit, 100% fruit juice, and sugar-sweetened beverages (SSB) during family meals. Associations between parental acculturation level and their likelihood of serving green salad, vegetables, fruit, 100% fruit juice and sugar-sweetened beverages during meal times were assessed with Spearman’s rank correlations. Results. There was a positive correlation between a higher level of acculturation on the Mexican Orientation Subscale (MOS) scale and the frequency of serving SSB during family meals (p=.006). There was a positive correlation between a higher level of acculturation on the Anglo Orientation Subscale (AOS) with the frequency of parents serving green salad (p=<.001), vegetables (p=<.001), and 100% fruit juice (p=.025) during family meals. Conclusion. Findings suggest that a higher Mexican orientation is associated with serving more sugar-sweetened beverages, and a higher Anglo orientation is associated with serving more green salad, vegetables, and 100% fruit juice to adolescents during family meals. Further research is needed to understand how the association of parental acculturation, home food environment, family meals, and socioeconomic status impact what they serve during family meals to their adolescents. A better understanding of what is served would help develop more evidence-based interventions that could help improve adolescents’ diet, which could help curb down obesity prevalence.

In this thesis project, I have created a cookbook that provides Polycystic Ovarian Syndrome-friendly recipes and explains how the consumption of the right foods can help to naturally balance the hormonal imbalances that are offset. For those with PCOS, diet matters because there are certain foods that significantly help with lowering one’s internal inflammation, and other foods that do just the opposite. Therefore, fueling our bodies with foods that are anti-inflammatory and manage insulin resistance is key to a solution that works from the inside out. The creation of this cookbook is to compile easy and delicious recipes that I have created for my PCOS diet. In recent years, many have been using the Mediterranean Diet, Keto Diet, and DASH Diet as guidelines for recommendations and substitutions due to elimination of saturated fats, processed food, and refined sugar. These alterations make a powerful tools to address internal inflammation, menstrual regulation, and other components of PCOS. Though this cookbook does not strictly follow the diet plans, the recipes are made with strong consideration of them and are easily replicable with stricter restrictions and even healthier options, should one want.

Therefore, birds may serve as a negative model animal for hyperglycemic complications. The physiological reason

Birds have the highest blood glucose concentrations of all vertebrates. Meanwhile, birds do not develop the same physiological complications (e.g., increased oxidative stress and glycation) that mammals do when blood glucose is elevated (i.e., diabetes). Therefore, birds may serve as a negative model animal for hyperglycemic complications. The physiological reason for high blood glucose in birds remains largely unknown although several unique characteristics of birds may contribute including a lack of the insulin responsive glucose transport protein, relatively high glucagon concentrations, as well as reliance on fatty acids to sustain the high energetic demands of flight. In breaking down triglycerides for energy, glycerol is liberated, which can be converted to glucose through a process called gluconeogenesis. In addition, the extent to which birds maintain homeostatic control over blood glucose in response to extreme dietary interventions remains unclear and few dietary studies have been conducted in wild-caught birds. Using Mourning Doves (Zenaida macroura) as a model organism, this dissertation tests four hypotheses: 1) Gluconeogenesis contributes to high circulating blood glucose concentration; 2-4) similar to mammals, a fully refined carbohydrate (i.e., white bread diet); a high saturated fat diet (60% kcal from fat); and an urban-type diet comprised of a 1:1 ratio of French fries and birds seed will increase blood glucose compared to a nutritionally-balanced diet after a four-week duration. Contrary to the hypothesis, 150 mg/kg Metformin (which inhibits glycerol gluconeogenesis) increased blood glucose, but 300 mg/kg resulted in no change. However, when 2.5 mg/kg of 1,4-dideoxy-1,4-imino-D-arabinitol (DAB; a glycogenolysis inhibitor) was given with 150 mg/kg of Metformin, blood glucose was not different from the control (50 ul water). This suggests that glycerol gluconeogenesis does not contribute to the naturally high blood glucose in birds and that a low dose of Metformin may increase the rate of glycogenolysis. In addition, all three experimental diets failed to alter blood glucose compared to control diets. Collectively, these results suggest that, in addition to a negative model for diabetes complications, birds can also serve a negative model for diet-induced hyperglycemia. Future research should further examine dietary manipulation in birds while controlling for and examining different variables (e.g., species, sex, duration, diet composition, urbanization).

Background: Hispanic women are at high risk for Type 2 Diabetes (T2D), in part due to their high prevalence of obesity, which may influence the development of insulin resistance and disease onset. Unhealthy eating contributes to T2D risk. Dietary patterns are the combination of total foods and beverages among individual’s over time, but there is limited information regarding its role on T2D risk factors among Hispanic women. Objective: To identify a posteriori dietary patterns and their associations with diabetes risk factors (age, BMI, abdominal obesity, elevated fasting blood glucose, and hemoglobin A1c) among overweight/obese Hispanic women. Design: Cross-sectional dietary data were collected among 191 women with or at risk for T2D using the Southwestern Food Frequency Questionnaire capturing the prior three months of intake. Dietary patterns were derived using exploratory factor analysis. Regression scores were used to explore associations between dietary patterns and diabetes risk factors. Results: The patterns derived were: 1) “sugar and fat-laden”, with high loads of sweets, drinks, pastries, and fats; 2) “plant foods and fish”, with high loads of vegetables, fruits, fish, and beans; 3) “soups and starchy dishes”, with high loads of soups, starchy foods, and mixed dishes; 4) “meats and snacks”, with high loads of red meat, salty snacks, and condiments; 5) “beans and grains”, with high loads of beans and seeds, whole-wheat and refined grain foods, fish, and alcohol; and 6) “eggs and dairy”, with high loads of eggs, dairy, and fats. The “sugar and fat-laden” and “meats and snacks” patterns were negatively associated with age (r= -0.230, p= 0.001 and r= -0.298, p<0.001, respectively). Scores for “plant foods and fish” were associated with fasting blood glucose (r= 0.152, p= 0.037). There were no other statistically significant relationships between the dietary patterns and risk factors for T2D. Conclusions: A variety of patterns with healthy and unhealthy traits among Hispanic women were observed. Being younger may play an important role in adhering to a dietary pattern rich in sugary and high-fat foods and highlights the importance of assessing dietary patterns among young women to early identify dietary traits detrimental for their health.

Introduction: Cystic fibrosis (CF) is the most common life-shortening autosomal recessive genetic disease affecting Caucasians. The disease is characterized by a dysfunctional cystic fibrosis transmembrane regulator (CFTR) protein and aberrant mucus accumulation that subsequently alters the physicochemical environment in numerous organ systems. These mucosal perturbations have been associated with inflammation and microbial dysbiosis, most notably in the lungs and gastrointestinal (GI) tract. Genistein, a soy isoflavone and dietary polyphenol, has been shown to modulate CFTR function in cell cultures and murine models, as well exert sex-dependent improvement of survival rates in a CF mouse model. However, it is unknown whether dietary genistein affects gut microbiome diversity and community structure in cystic fibrosis. This study sought to examine associations between dietary genistein treatment and gut microbiome diversity and community structure in a murine model of CF. Methods: Twenty-four male and female mice homozygous for the DF508 CFTR gene mutation were maintained on one of three diet regimens for a 45-day period (n=11, standard chow; n=7, Colyte-treated water and standard chow; n=6, 600 mg dietary genistein per kg body weight). One fecal pellet was collected per mouse post-treatment, and microbial genomic DNA was extracted from the fecal samples, quantified, amplified, and sequenced on the Illumina MiSeq platform. QIIME 2 was used to conduct alpha- and beta-diversity analyses on all samples. Results: Measures of alpha-diversity were significantly decreased in the dietary genistein group as compared to either standard chow or Colyte groups. Measures of beta-diversity showed that community structure differed significantly between dietary treatment groups; these differences were further illustrated by distinct clustering of taxa as shown by principal coordinates analysis plots. Conclusion: This 3-arm parallel experimental study showed that dietary genistein treatment was associated with decreased microbial diversity and differences in microbial community structure in DF508 mice.

Food banks are the foundation of the emergency food network, and while their chief mission is to mitigate hunger, the rise in obesity and other diet-related diseases among clientele has incited the need for better nutritional control with regards to procurement of inventory at food banks. The purpose of this research was to determine if procured inventory at United Food Bank in Mesa, Arizona could meet minimum MyPlate recommendations for a typical food bank client and what implications the results could have for future policy. Inventory data was obtained from United Food Bank for fiscal year 2013-2014 and analyzed utilizing the MyPlate Analysis Program to determine contributions of each food category to MyPlate recommendations. Inventory was separated by MyPlate food category and analyzed to determine contribution towards a meal built around MyPlate recommendations. Results showed that the inventory could meet the minimum requirements for protein and grains for a family of four for at least three days, the amount of time an emergency food box is designed to last. On the contrary, the inventory did not meet minimum vegetable, fruit or dairy requirements. These results indicate that typical food bank inventory does not meet USDA MyPlate recommendations and that having nutritional policy in place could potentially drive donations and purchases to enhance the nutritional quality of future food bank inventory.
