This creative project seeks to demonstrate the nutritional and financial benefits of cooking in versus eating out to college age students. We sought to determine what factors significantly differentiated restaurant meals versus home-cooked versions, and how we could share this information with our peers to potentially influence them to make a healthy lifestyle change. The first step was to determine the factors that influence college-aged students eating habits, and was presented with a review of relevant literature in several topics. We researched food literacy in young adults, the impact of fast food, social media's role in healthy eating habits, health behavior change in young adults, and the benefits of home cooking to obtain a general baseline of the knowledge of college-aged students. The initial research was utilized to write more effective blog posts that appropriately addressed our targeted demographic and to determine what platforms would be most appropriate to convey our information. These ideas were taken and then translated into a blog and Instagram account that contained healthy, copycat recipes of popular restaurant meals. We wrote 30 blog posts which were made up of 20 original recipes, 8 nutrition informational posts, and an introduction/conclusion. Finally, a focus group was hosted to ascertain the opinions of our peers, and to determine if they would be willing to make a lifestyle change in the form of cooking more frequently as opposed to eating out regularly. We provided them with a pre and post survey to gather their opinions before and after reviewing the findings of our research and project. We concluded that if given the information in an accessible way, college students are willing to eat in, not out.

Most reliable nutrition information can be found online, but it can be nearly impossible to differentiate from the unreliable blogs and websites that claim their information is correct. Because of this, it can be difficult for students to determine which information is true and which advice they will follow. During this time of growth and learning, it is essential that students have access to accurate information that will help them to be healthier individuals for years to come. The goal of this project was to provide students with an easily accessible and reliable resource for nutrition information that was presented in a simple and relatable way. Attending college provides young adults with a major shift in environment from high school where many students are used to living at home with their parents or guardians. Students experience a newfound freedom once beginning their freshman year, especially if living in on-campus housing. Freshmen are known to gain weight during this transitory period, and this has been partially attributed to changes in eating behaviors, which makes this a population of concern. College freshmen have significant autonomy over their food choices if not living at home, due to not having parents or guardians present. In the transition to college, freshmen are able to adopt new habits, healthy or unhealthy, which could make a large impact on their health habits for the rest of their lives; this is why the freshman population is an area of concern. RESULTS: None of the relationships between social connectedness and FF consumption were found to be statistically significant. Social connectedness was not significantly related to cross-sectional FF intake at the two different phases, or longitudinally between the two phases, even after adjustments were made. Additionally, there were no gender differences present in FF consumption or social connectedness at either phase. CONCLUSION: The lack of significant findings suggest that social connectedness might not be a reason college freshmen consume FF. Students might eat with others due to the convenience of living closely to them rather than as a means to socialize. Also, factors such as time constraints and cost might have played a larger role in why students consumed FF. Future research could involve similar studies using shorter questionnaires more tailored to eating behaviors, with more detailed measures of FF consumption (e.g. What specific FF meals did you consume?) and for a longer duration of time, to allow students to become more situated in their environment and have a better knowledge of all their food options. This study was an important contribution to the sparsely researched topic of social connectedness with a large and diverse sample studied longitudinally. It was also the only study of its kind to be performed on the college population, and had potential for future health implications in obesity and chronic conditions such as hypertension and type II diabetes. Further research is warranted to evaluate the relationship between social connectedness and other eating behaviors.

According to the CDC, diabetes is the 7th leading cause of death in the U.S. and rates are continuing to rise nationally and internationally. Chronically elevated blood glucose levels can lead to type 2 diabetes and other complications. Medications can be used to treat diabetes, but often have side effects.

According to the CDC, diabetes is the 7th leading cause of death in the U.S. and rates are continuing to rise nationally and internationally. Chronically elevated blood glucose levels can lead to type 2 diabetes and other complications. Medications can be used to treat diabetes, but often have side effects. Lifestyle and diet modifications can be just as effective as medications in helping to improve glycemic control, and prevent diabetes or improve the condition in those who have it. Studies have demonstrated that consuming vinegar with carbohydrates can positively impact postprandial glycemia in diabetic and healthy individuals. Continuous vinegar intake with meals may even reduce fasting blood glucose levels. Since vinegar is a primary ingredient in mustard, the purpose of this study was to determine if mustard consumption with a carbohydrate-rich meal (bagel and fruit juice) had an effect on the postprandial blood glucose levels of subjects. The results showed that mustard improved glycemia by 17% when subjects consumed the meal with mustard as opposed to the control. A wide variety of vinegars exists. The defining ingredient in all vinegars is acetic acid, behind the improvement in glycemic response observed with vinegar ingestion. Vinegar-containing foods range from mustard, to vinaigrette dressings, to pickled foods. The benefits of vinegar ingestion with carbohydrates are dose-dependent, meaning that adding even small amounts to meals can help. Making a conscious effort to incorporate these foods into meals, in addition to an overall healthy lifestyle, could provide an additional tool for diabetics and nondiabetics alike to consume carbohydrates in a healthier manner.

The purpose of this project is to understand how wearable technology can improve a person's practice of self-tracking, or monitoring one's data. Self-tracking is regularly recording information about one's different life patterns (such as diet, activities, or sleep). Some technology that helps users record personal data are seen today as devices (FitBit, Smart Watches) or as applications (MyFitnessPal). Data is collected for the user to observe certain habits that he/she would like to improve upon. Their personal data that is collected and this helps keep the person self-tracking. This data can be converted to show personal behavioral patterns which a person analyzes so that they can make changes that lead to a healthier lifestyle. People self-track in order to analyze their behavior patterns, so that they can make changes to those patterns that lead to a healthier lifestyle. However, some people are not motivated to continue self-tracking, or use their data to make positive behavioral changes. To better understand this problem, we are conducting four co-design sessions with four users who have shown varying levels of self-tracking. Sessions' activities included: storyboarding, reviewing existing user interfaces, generating feedback on prototypes and discussion into thoughts and feelings about the prototype and self-tracking in general. Current findings highlight the importance of customization and simplicity within the application. We are developing an Apple Watch prototype application for self-tracking that incorporates features tailored to those needs in order to better motivate users to track and improve their well-being. My project goes over the biology of chronic kidney disease, including what CKD is, definitions to understand, the prevalence of it, the signs and symptoms, and the main causes. Then I go over the nutrition guidelines of the disease and the nutrients important to regulate, including sodium, protein, fats and whole grain carbohydrates, potassium, and phosphorus. Next, I write about recipes that I modify to be kidney-friendly and make nutrient analyses for each original recipe and each modified recipe. Finally, I made a video of myself cooking and trying two of the modified recipes.

This paper outlines cumulative research on food deserts in relation to college students; namely, that there are communities classified as food deserts because significant numbers of the population lack access to grocery stores selling fresh produce or other goods normally called “healthy.” These areas are often also food swamps, or areas with intense access to sugar-dense, high-fat foods. Research as a whole suggests that three, among many, things might primarily drive food insecurity for individuals caught in these food deserts: lack of access to a personal vehicle, low income or prohibitively expensive healthy foods, and personal education or culture (Wright, 2016). College students both fit into the geographical food deserts and are individuals who tend to have a worrying level of food insecurity (Kim, 2018). It is costly to make adjustments to entire environments to rid communities of food desert qualities, and it is not always effective as ending food insecurity or malnutrition; instead, it can be much more effective to focus on individuals within communities and help push cultures into a better direction. This project demonstrates that ASU students are experiencing food dissatisfaction and are in a food desert worthy of attention and action, and that students are motivated to see a solution. The solution that the paper focuses on is a food delivery system of fresh produce and foods for students.

The purpose of this project was to garner a greater understanding of the form, function, and uses of school as well as community gardens. Worldwide, school and community gardens are used to promote health, nutrition, and some aspects of education. I wished to extend my knowledge of these gardens to greater lengths by building and incorporating a school garden in a community that was underderserving. Along the way I also sought to better my understanding of how to help communities through the knowledge and aid of experts and other community members. By doing this, I would hopefully both improve that community as well as understand the difficulties and problems that stand in the way of greater school garden incorporation.

Cancer is an ever-relevant disease with many genetic, social, environmental, and behavioral risk factors. One factor which has been garnering interest is the impact of nutrition on cancer. As a disease process, cancer is primarily driven by an accumulation of genetic aberrations. Recent epidemiological, pre-clinical, and clinical studies have demonstrated various impacts of bioactive food molecules on the promotion or prevention of these oncogenic mutations. This work explores several of these molecules and their relation to cancer prevention and provides a sample meal plan, which highlights many additional molecules that are currently being studied.

Optimizing the microbiome to improve gut health has become a prominent research topic that aids in relieving stomach issues through nutrition and the introduction of beneficial bacteria. By incorporating a few gut-healthy foods into the diets of developing children, I hope to decrease their chances of developing pediatric diseases and experiencing stomach problems as they grow older. The purpose of this cookbook is to use ingredients that are beneficial to the gut microbiome and incorporate them into healthy recipes that children can easily understand and create themselves. Additionally, many factors influence the fluctuation of the gut microbiome, one of which is nutrition, so it is important to maintain a diet rich in foods beneficial to the gut microbiome because it can prevent the onset of certain pediatric diseases. By including gut-healthy recipes in a cookbook targeted towards kids, they can gain independence, engage in a bonding activity with their parents, and be guided into creating and consuming things that are good for their gut and will benefit their health in the future. There are also many benefits for children who use this cookbook, such as developing healthy habits and preventing common disorders like obesity, IBS, and IBD. However, the overarching goal is to create a fun and engaging way for kids to prioritize good gut health for a healthy future. I hope that through this cookbook, kids can take control of their diet and engage in an activity that I enjoyed as a child.
