Obesity has reached epidemic proportions all around the world, and it has doubled in prevalence in both adults and children in over 70 countries from 1980 to 2015 (Afshin et al., 2017). Excessive weight gain in this proportion has been shown to negatively affect human cognition, reward neurocircuitry, stress responsiveness, and quality of life (Morris et al., 2015). Obesity is an example of a complex interaction between the environment (i.e., high-fat diets) and heredity (i.e., polygenic patterns of inheritance). The overconsumption of a high-fat diet (HFD) is an environmental factor that commonly induces weight gain (Hariri & Thibault, 2010). Two dietary-induced phenotypes have been observed in rats as a bimodal distribution of weight gain: obesity-prone (OP) and obesity-resistant (OR). Levin et al. (1997) investigated male and female HFD-fed Sprague-Dawley rats designated as OR when their weight gains were less than the heaviest chow-fed controls, and OP when their weight gains were greater than the heaviest chow-fed controls. OP rats showed greater weight gain, similar energy intake (EI), and similar feed efficiency (FE) compared to OR rats. Pagliassotti et al. (1997) designated male HFD-fed Wistar rats as OP and OR based on upper and lower tertiles of weight gain. OP rats displayed greater weight gain and EI than OR rats. These investigations highlight a predicament regarding rodent research in obesity: independent variables such as rat age, gender, strain, distribution of dietary macronutrients, and fatty acid composition of HFD and chow vary considerably, making it challenging to generalize data. Our experiment utilized outbred male Sprague-Dawley rats (5-6 weeks) administered a chow diet (19% energy from fat; 3.1 kcal/g) and a lard-based HFD (60% energy from fat; 5.24 kcal/g) over eight weeks. Separate rat populations were examined over three consecutive years (2017-2020), and independent obesogenic environmental variables were controlled. We investigated the persistence of weight gain, EI, and FE in HFD-fed rats inclusive of a population of designated OP and OR rats based on tertiles of weight gain. We define persistence as being p > 0.05. We hypothesize that the profiles (periodic data) of the dependent variables (weight gain, EI, FE) will be similar and persistent throughout the three separate years, but the magnitudes (cumulative data) of the dependent variables will differ. Our findings demonstrate that HFD, OP, and OR groups were persistent for periodic and cumulative weight gain, along with FE across the three consecutive independent years. Our findings also demonstrate impersistence for periodic EI in all groups, along with impersistence in cumulative EI for CHOW, OP, and OR groups. Therefore, our results allude to an inconsistent relationship between EI and weight gain, indicating that EI does not completely explain weight gain. Thus, the weakness between EI and weight gain relationship may be attributed to a polygenic pattern of inheritance, possibly signaling a weight setpoint regardless of EI.

Migration allows animals to track favorable environments and avoid harmful conditions but is energetically costly. There are different types of migration, such as tidal/daily, seasonal, and lifetime. Locust migratory swarms are one such famous phenomena that can have dramatic effects on human livelihoods. During long-distance flight, locusts rely on lipid oxidation from fat stores, while initial flight is fueled by carbohydrates. However, limited studies have tested how dietary macronutrients affect insect flight performance. Therefore, we asked: How do different dietary macronutrient ratios affect prolonged flight migration? We predicted that high carbohydrate diets would lead to high body lipid synthesis which would increase flight performance. We reared locusts in three crowded cages from 5th instar to adulthood on artificial diet varying in p:c ratio, supplemented with lettuce and water tubes, ad libitum. We used 7-14-day old adult males for flight performance assays where each day we used new individuals for tethered flight for 12 h in wind tunnels (~12 km·h-1) and video recorded their flight. We found that locust flight duration and quality increased with a decrease of dietary p:c ratio. Using control groups of locusts, we estimated that across 1 day of flight (up to 12 h), locusts lost on average in all treatments ~25 or ~30% of their total body lipid content. We concluded that long distance flight is improved by a high carbohydrate and low protein diet for L. migratoria by increasing their fuel sources. This work was supported by NSF # 1942054.

The objective of this study was to evaluate sustainability knowledge and practices in place at university-associated food pantries across the United States. A survey was sent to university- associated food pantries and responses were collected at a rate of 25% (n=84 of 326) to assess the knowledge and practices of this topic. The pantries surveyed were chosen solely based on ability to contact through email (emails were retrieved from online sources) and about 50% of the 680 university-associated pantries in the United States were sent the survey. The data was analyzed by quantifying the qualitative responses to the 9 sustainability- rated questions addressing zero- waste practice, barriers to offering sustainably sourced foods, types of sustainable donations, desire for sustainable products, and client demand for sustainable products and practices were posed to pantries. Results from this study provided insight into awareness of sustainability in these pantries and also assessed what sustainability practices are already being practiced by these pantries. Among those surveyed, a low percentage of university-associated pantries actually provide sustainably sourced foods (9.5%), but given the choice about a third (38.1%) would choose to offer these foods. It was reported that availability and cost were perceived as main barriers to providing sustainably sourced foods and that a small proportion of pantries teach their clients about zero waste practices, compost, and recycling. There is little client concern about this issue. Most pantries reported recycling more often than composting and also reported participating in some zero-waste practices. These results are unique to this study as not much research has been done in this area to assess environmental sustainability awareness in university-associated food pantries. Further research is required to further evaluate pantries across the nation as this sample size is approximately 12% of all university- associated pantries in the United States.

The prevalence of obesity continues to increase in the United States, along with its risk for other associated cardiovascular and metabolic diseases. Several therapeutic methods are aimed at targeting and reducing obesity, now defined as a state of chronic, low-grade inflammation (in addition to BMI > 30 kg/m2). In an attempt to expand on these therapeutic methods, research on the concept of browning in white adipose tissue (WAT) and brown adipose tissue (BAT) is being conducted. Brown adipose tissue (BAT), and a newly discovered type of adipocyte, beige adipocytes, are heavily involved in thermogenesis with the use of uncoupling protein-1 (UCP-1). This paper focuses on the analysis of common browning genes, ATP-related genes, and metabolic genes in varying biological groups in mice (Chow/High-Fat Diet and Inguinal FAT and Perigonadal Fat) and in humans (Lean/Obese and Subcutaneous WAT (SC) and Omental WAT (OM)) using methods such as RT-PCR and immunohistochemistry. The data obtained shows an increase in browning in the leaner group, specifically in the subcutaneous fat. Further, browning is significantly reduced in the obese groups of subjects and mice tested, in addition to omental/perigonadal versus subcutaneous/inguinal fat depots. Interestingly, two key ATP genes, UCP-1 and COX4I1 are vastly elevated in the OM WAT, indicating that browning may not be as important in the OM, but rather may have a potential role in SC. This is contrary to prior research findings that attempt to exclude mice surrogates in future experimentation of the browning phenomenon. Further experimentation is needed to expand on the findings of this paper.

Prior studies of Mourning Doves have observed no changed in glucose in response to either a high fat “chow” diet or a white bread diet. In the current feeding study, we fed doves an urban diet, high in carbohydrates, fat, and sodium, which is representative of typical American nutrition accessible to the avian population in an urbanized environment. Based on studies of other avian species that examined the effects of an urban diet on physiology, I hypothesized that doves fed an urban diet would have increased plasma glucose and sodium, which would promote an increase in plasma osmolality. This hypothesis was based on preliminary data that found birds fed an urban diet developed impaired vasodilation compared to seed diet control birds. Therefore, differences in plasma glucose, sodium, and osmolality were examined as increases may contribute to the impairment. Adult doves of both sexes were captured on the Arizona State University, Tempe campus. Doves were placed in two dietary groups: an urban diet consisting of a 50/50 ratio of French fries and nutritionally-balanced bird seed (n=7) and a control group of only the seed diet (n=6). Following the four-week diets, birds were euthanized, and cardiac plasma samples were collected from birds to measure glucose, sodium, and osmolality. There were no significant differences between the two study groups in plasma glucose concentration (p=0.445), sodium concentration (p=0.731), or osmolality (p=0.692). Sodium concentrations were signficantly more variable in birds consuming a seed diet than those that were provided the mixed French fry and seed diet (p=0.014). These results suggest that glucose, sodium, and osmolality likely do not contribute to the altered vasodilation of doves fed an urban diet and that such a diet may not be as detrimental to the doves health given their phenotypic flexibility.

In the United States, cardiovascular disease remains the number one cause of death. The most prevalent risk factor for cardiovascular disease is poor nutrition and thus, proper nutrition is often used as a preventative measure. With the expensive and often ineffective medications and procedures currently being used to treat cardiovascular disease, we need to find a better solution. One promising solution is nutrition therapy, which is the implementation of proper nutrition guidelines into the treatment plan of patients with cardiovascular disease. After close research and analysis of four popular diets, a vegan (plant-based) diet, vegetarian diet, and Mediterranean diet could offer improvement of cardiovascular disease risk factors and chances of cardiovascular disease mortality. Different ways to start implementing nutrition therapy in medicine include emphasizing nutrition education in medical school and/or including registered dietitians in the treatment process for cardiovascular disease patients.

Multiple sclerosis is currently deemed the most common autoimmune disease. By definition, multiple sclerosis, known more commonly as MS, involves an immune-mediated process in which an abnormal response of the body’s immune system is directed against the central nervous system (“Definition of MS,” n.d.). Common treatment protocols call for daily, monthly, or yearly disease-modifying medications. These drugs are taken indefinitely to stop the spread and appearance of new lesions, improve symptoms, and offer relief to the afflicted individuals. The necessity for patients to take these basic medical treatments is paramount, however, it should not be overlooked to make lifestyle changes as well. The purpose of this paper is to give a detailed understanding of multiple sclerosis, its etiology evolution, and medical advancements, while emphasizing the necessary transitions which must be made from a nutritional and lifestyle management standpoint. A brief focus will be placed on sleep, exercise, and stress management, with an emphasis on nutrition.

Those that must follow a Celiac diet should know that there are challenges that come with it. Wheat contains a ton of essential vitamins and minerals such as folate, magnesium, thiamin and niacin among many others. By cutting these out, it is possible to become deficient in these essential nutrients that play roles all throughout the body. One of our goals in making this cookbook was to include recipes that would be packed with these dietary components. We wanted to not only make this cookbook tangible for newly-diagnosed Celiac people, but also ensure that they have the balanced diet they need to avoid deficiencies. While admittedly not every meal is going to be loaded with those good vitamins and minerals, we believe the phrase “everything in moderation” is a good way to approach this new diet.

Background: Despite a multitude of health initiatives, obesity rates in America have continued to increase yearly, with obese or overweight people making up two-thirds of the population. Due to a lack of significant results from diet and weight-loss medication, new methods of weight-loss are increasingly considered. This paper looks beyond

Background: Despite a multitude of health initiatives, obesity rates in America have continued to increase yearly, with obese or overweight people making up two-thirds of the population. Due to a lack of significant results from diet and weight-loss medication, new methods of weight-loss are increasingly considered. This paper looks beyond traditional Western treatments for weight loss and will analyze views and treatments for overweight and obesity in traditional Chinese medicine (TCM).
Methods: Three databases were used to search for papers published after 2010 until October 2019 discussing obesity, overweight and TCM. No forms of Chinese medicine were excluded from the search. Studies were excluded if they did not meet the date criteria or if they overlapped with papers found in other databases.
Results: Six of the selected papers covered acupuncture (electro, balance or catgut embedding acupuncture methods) either jointly with other treatments or alone, one exclusively on moxibustion and three studies on three different types of TCM herbal medicine. Each study showed a statistically significant effect on body mass index (BMI) value decrease or total weight loss (TWL). The six acupuncture papers all showed statistical significance at the 95% CI against control groups (sham acupuncture or no acupuncture) and against before-treatment BMI values or TWL values.
Conclusion: Of the treatments reviewed, almost all acupuncture studies were shown to be consistently effective in treating overweight or obese individuals within this selection of studies, as well as in another meta-analysis. This may be due to acupuncture’s ties to a neuroendocrine mechanism. Future studies should further explore the neuroendocrine connection between acupuncture and weight loss. Herbal medication was also shown to have a significant effect in reducing weight in each study; however, two studies used mice or rats as subjects, therefore understanding the effects on human subjects is limited.
