Birds have shown promise as models of diabetes due to health and longevity despite naturally high plasma glucose concentrations, a condition which in diabetic humans leads to protein glycation and various complications. Research into mechanisms that protect birds from high plasma glucose have shown that some species of birds have naturally low levels of protein glycation. Some hypothesize a diet rich in carotenoids and other antioxidants protects birds from protein glycation and oxidative damage. There is little research, however, into the amount of protein glycation in birds of prey, which consume a high protein, high fat diet. No studies have examined the potential link between the diet of carnivorous birds and protein glycation. The overall purpose of this study was to evaluate whether birds of prey have higher protein glycation given their high protein, high fat diet in comparison to chickens, which consume a diet higher in carbohydrates. This was accomplished through analyses of serum samples from select birds of prey (bald eagle, red-tailed hawk, barred owl, great horned owl). Serum samples were obtained from The Raptor Center at the University of Minnesota where the birds of prey consumed high protein, high fat, non-supplemented diets that consisted of small animals and very little to no carbohydrate. Serum was also obtained from one chicken for a control, which consumed a higher carbohydrate and antioxidant-rich diet. Glucose, native albumin glycation and antioxidant concentrations (uric acid, vitamin E, retinol and several carotenoids) of each sample was measured. Statistical analyses showed significant between group differences in percent protein glycation amongst the birds of prey species. Glycation was significantly higher (p < 0.001) in bald eagles (23.67 ± 1.90%) and barred owls (24.28 ± 1.43%) compared to red-tailed hawks (14.31 ± 0.63%). Percent glycation was higher in all birds of prey compared to the chicken sample and literature values for chicken albumin glycation. Levels of the carotenoid lutein were significantly higher in bald eagles and barred owls compared to great horned owls and red-tailed hawks and the carotenoids beta-cryptoxanthin and beta-carotene were significantly greater in bald eagles compared to red-tailed hawks and great horned owls.

Background. Despite research aimed at understanding the mechanisms of essential hypertension, instances of this condition continue to rise. Recent findings indicate that the administration of dietary nitrates, in the form of beetroot juice and other nitrate-rich vegetables, may offer anti-hypertensive effects in various study populations.

Objective. This randomized, placebo-controlled, crossover trial sought to compare the effects of high-nitrate vegetable salads to the effects of low-nitrate canned vegetables on plasma nitrate
itrite concentration, peripheral and central-aortic systolic and diastolic blood pressures, pulse wave velocity, and flow-mediated dilation.

Methods. Healthy, post-menopausal women (n=5; 80% Caucasian; 52.6 ± 5.7 years) with mildly elevated blood pressure (mean blood pressure ≥ 115/70 mm Hg and < 140/80 mm Hg) were randomly assigned to ingest a fresh, high-nitrate vegetable salad or a low-nitrate vegetable medley, twice per day, for a total of 10 consecutive days. Given the crossover design of the trial, participants observed a two to three week washout period followed by reassignment to the opposite condition. Findings were considered significant at a p-value < 0.05, and Wilcoxon Signed-Rank tests compared mean differences between conditions.

Results. Plasma nitrate
itrite concentration was significantly higher following consumption of the high-nitrate versus the low-nitrate condition (p = 0.043). Conversely, the differences in peripheral systolic and diastolic blood pressures were not statistically significant (p = 0.345 and p = 0.684 for systolic and diastolic pressures, respectively) nor were the differences in central-aortic systolic and diastolic blood pressures statistically significant (p = 0.225 and p = 0.465 for systolic and diastolic pressures, respectively). Similarly, when comparing the effects of the high-nitrate condition to the low-nitrate condition, the difference in pulse wave velocity was not statistically significant (p = 0.465). Finally, flow-mediated dilation tended to improve following consumption of the high nitrate condition (p = 0.080).

Conclusion. Twice daily consumption of a fresh, high-nitrate vegetable salad significantly increased plasma nitrate
itrite concentration. Although the trial was underpowered, there was a trend for improved flow-mediated dilation. Finally, twice daily consumption of a fresh, high-nitrate vegetable salad did not significantly lower peripheral or central-aortic systolic or diastolic blood pressures or pulse wave velocity.

Cardiovascular disease is the leading cause of death in the world, responsible for 17.3 million deaths annually. Aerobic activity and almond ingestion have a cardio-protective effect against cardiovascular disease, however, the synergistic effect of both interventions is not known. This 8-week randomized, parallel, two-arm study examined the combined effect of daily almond ingestion (2.5 ounces) and brisk walking (10,000 steps per day) compared to ingestion of an isocaloric placebo (4 Tbsp cookie butter) and brisk walking (10,000 steps per day) in sedentary adults on various markers of cardiovascular health. The additive effect of the daily walking intervention with almond consumption resulted in significant differences in total cholesterol with a -11.0 ± 10.5 and +3.3 ± 15.8 mg/dL (p=0.043) change in the ALM and CON group respectively and LDL with a -11.5 ± 7.5 and +0.5 ± 13.7 mg/dL (p=0.025) change in the ALM and CON group respectively. There was a trend for TBARS to decrease in the ALM group versus the CON group (-0.2 ± 0.8 and +0.3 ± 0.6 nmol MDA/mL (p=0.099) respectively) with a large effect size of 0.304 but this did not reach statistical significance. There were no significant differences seen in markers of other plasma lipid profile measures, plasma inflammatory cytokines, or blood pressure regulation. Results suggest that the simple, cost-effective, and accessible intervention of daily brisk walking and almond consumption is an effective strategy to reduce cardiovascular disease risk in sedentary adults through improvements in cholesterol. This represents a pilot study due to the small sample size, therefore, additional studies are needed to determine the impact and mechanisms of this synergistic effect.

Sustainability, as it relates to nutrition, affects all aspects of food from systems-level production to consumption. Viability of local food systems in the southwest of the United States has been largely understudied. In order to address this gap in the literature, semi-structured interviews were conducted with 20 farmers in Arizona and New Mexico to determine best practices, challenges and barriers to farming. Interviews were recorded, transcribed, and coded for themes. Many trends were consistent with those reported elsewhere in the US, but the importance of water emerged, a unique need not explicitly noted in other regional studies.

Vegetarian diets are typically more sustainable than omnivorous ones due to using less environmental resources in the production of food. An important consideration with plant protein and vegetarian diets, however, is whether this would affect athletic performance. To examine this, 70 male and female endurance athletes were compared for maximal oxygen uptake (VO2 max), peak torque when doing leg extensions, and body composition. Vegetarians had higher VO2 max, but peak torque was not significantly different by diet. Omnivores had higher total body mass, lean body mass, and there was a trend for peak torque to be higher.

To investigate whether plant-protein can comparably support development of lean body mass and strength development in conjunction with strength training, 61 healthy young males and females began a 12-week training and protein supplementation study. While previous training studies have shown no differences for lean body mass or strength development when consuming either soy (plant) or whey (animal) protein supplements in very large amounts (>48 grams), when consuming around 15-20 grams, whey has contributed to greater lean body mass accrual, although strength increases remain similar. The present study matched supplements by leucine content instead of by total protein amount since leucine has been shown to be a key stimulator of muscle protein synthesis and is more concentrated in animal protein. There were no significant differences between the whey or soy group for lean body mass or strength development, as assessed using isokinetic dynamometry doing leg extensions and flexions.

Water is an essential nutrient that is often overlooked. As a result of this hydration status is often forgotten as well. Becoming hypohydrated puts athletes at risk of decreased performance and potentially life-threatening heat illness. Being able to self-assess hydration status is may be instrumental in helping athletes safely optimize performance. Therefore, this study investigated, 1) the ability of an athletic population vs. trained investigators to self-diagnose underhydration, 2) the diagnostic ability of urine color (Ucol) charts as a method for diagnosing underhydration, and 3) the accuracy of participant and investigator assessments. Members of an athletic population each provided a urine sample and scored samples using both the traditional 8-color and newly developed 7-color Ucol chart. Investigators then scored the samples using the same methods. To determine the diagnostic value of the Ucol charts, Ucol scores were compared to concentration measures of Urine Specific Gravity (USG) and Urine Osmolality (Uosm). Differences in participant and investigator scores were compared using Mann-Whitney U and Spearman’s Correlation. Bland-Altman plots were drawn to assess individual differences in reporting against the mean of the two methods. Receiver Operating Characteristic (ROC) analysis was used to both determine the ability of both charts to diagnose underhydration and to determine how well participants and investigators can determine their level of hydration. Athletes reported Ucol significantly lighter compared to investigators. Investigators showed no difference in reporting between the two charts but, athletes reported less than a color shade difference. The charts performed fair (8-color) to good (7-color) at diagnosing hypohydration. Athletes reported with less accuracy compared to investigators, and Ucol classification was found to be more accurate when compared to USG. Ucol charts are a practical tool to determine hydration status. Ucol scoring is similar regardless of the type of chart used. Trained investigators reported with slightly higher accuracy on both charts compared to untrained athletes. Athletes score Ucol fair to good in comparison to investigators. Ucol scoring is similar regardless of the type of chart used. The diagnostic ability of both Ucol charts is good in relation to USG. With education, athletes may be able to improve scores.

Tools designed to help match people with behaviors they identify as likely to lead to a successful behavioral outcome remain under-researched. This study assessed the effect of a participant-driven behavior-matching intervention on 1) the adoption of a new behavior related to fruit and vegetable (F&V) consumption, 2) study attrition, and 3) changes in F&V consumption. In this two-arm randomized controlled trial, 64 adults who did not meet standard F&V recommendations were allocated to an intervention (n=33) or control group (n=31). Participants in the intervention group ranked 20 F&V-related behaviors according to their perceived likelihood of engagement in the behavior and their perception of the behavior’s efficacy in increasing F&V consumption. Participants in the intervention group were subsequently shown the list of 20 behaviors in order of their provided rankings, with the highest-ranked behaviors at the top, and were asked to choose a behavior they would like to perform daily for 4 weeks. The control group chose from a random-order list of the same 20 behaviors to adopt daily for 4 weeks. During the study period, text messages were sent to all participants 90 minutes before their reported bedtime to collect Yes/No data reflecting successful behavior engagement each day. The binary repeated-measures data collected from the text messages was analyzed using mixed-effects logistic regression, differences in attrition were assessed using log-rank analysis, and change scores in F&V consumption were compared between the two groups using the Man-Whitney U test. P<0.05 indicated significance. The rate of successful behavior adoption did not differ significantly between the two groups (b=0.09, 95%CI= -0.81, 0.98, p=0.85). The log rank test results indicated that there was no significant difference in attrition between the two groups (χ2=2.68, df=1, p=0.10). F&V consumption increased significantly over the 4 weeks in the total sample (Z=-5.86, p<0.001), but no differences in F&V change scores were identified between the control and intervention groups (Z=-0.21, p=0.84). The behavior-matching tool assessed in this study did not significantly improve behavior adoption, study attrition, or F&V intake over 4 weeks.

A large amount of research associates the lack of fruit and vegetable consumption and the intake of animal-based foods with poor health outcomes. Making shifts towards a plant-focused diet could benefit the health of individuals. Individuals who show the highest long-term adherence to the avoidance of animal-based foods are those who value animal welfare. PURPOSE: The primary purpose of this study is to explore the validity of a novel animal food frequency questionnaire (AFFQ) in relation to dietary animal food intake using 3-day dietary food logs and measuring potential renal acid load (PRAL). PRAL is the amount of acid that is produced by the body after digesting food. Fruits and vegetables produce a lower acid load, which is reflective of positive health outcomes. A secondary aim of this study is to explore the relation between AFFQ scores and measures of empathy. METHODS: Participants complete a 10-minute survey including the AFFQ and the BES-A. The Basic Scale of Empathy for adults will be viewed based on the 2 factor and 3 factor analysis assessing: Affective empathy, Cognitive empathy, Emotional contagion, and Emotional Disconnection. The AFFQ will be scored and correlated with the 3-day food log and PRAL to explore validity of the new AFFQ scale. Secondarily, the AFFQ will be scored and correlated with the BES-A to explore an association. RESULTS: The null hypotheses H01 and H02 were rejected. H01 showed that AFFQ correlates significantly with percentage of dietary protein coming from animal- based products (r=.676, p=.016). H02 showed AFFQ has a significant correlation to PRAL (r=.831, p<.001). PRAL and the percentage of protein in the diet coming from animal-based products have a significant correlation (r=.725, p=.008). The null hypothesis H03 was accepted with AFFQ and BES-A 2 factor and 3 factor’s correlations showing (r= -.412, p=.183) and (r= -.307, p=.332). CONCLUSION: The AFFQ was able to reflect differences in frequency of animal-based food intake among the convenience sample. The AFFQ and individuals’ food choices were not related to their empathy levels.

This feasibility study explored the use of an evolutionary mismatch narrative in nutritional education intervention aiming to reduce ultra-processed foods in the diets of veterans with type 2 diabetes and improve diabetic outcomes. Ultra-processed foods are foods that are primarily manufactured through industrial processes. These foods are high in calories but low in nutritional content. Diets high in these foods have been linked to increased health risks. One of the major health risks is type 2 diabetes. Type 2 diabetes is a chronic disease that is developed when cells become unable to properly utilize insulin. Over time this may lead to additional health conditions such as nerve damage, cardiovascular disease, and renal disease. Evolutionary mismatch narrative nutritional intervention offers a different approach to nutritional education to help reduce ultra-processed foods in diets. This study was a randomized controlled feasibility study at the Phoenix VA. Eleven participants were enrolled and randomly selected to be given either an evolutionary mismatch narrative education intervention or general nutritional education about ultra-processed foods. 24-hour diet recalls and blood chemistry were collected and analyzed. Blood chemistry provided diabetes related measurements which included glucose, HbA1c, insulin, HOMA-IR, and C-reactive protein. Statistically significant findings in this study included percentage of ultra-processed foods decreasing for both control and experimental groups from week 0 to week 4 (p=0.014), and C-reactive protein levels between the control and experimental groups (p=0.042). However, baseline C-reactive protein concentrations were lower in the experimental group such that normalizing for group differences at baseline revealed no significant difference in C-reactive protein change between interventions (p = 1.000). There were no other statistically significant values regarding diabetes related measurements. The results from this study suggest that nutritional education in general may help decrease ultra-processed food consumption.

This study aimed is to examine the impact of a nutritional supplement containing fermented whey protein with Galacto-oligosaccharide (GOS) fiber on GI distress among well-trained athletes over time by analyzing self-reported GI complaints without a control group. This quasi-experimental clinical trial consisted of a 3-week baseline period, reflected by two baseline measurements on Day 1 and Day 22, which was followed by a 3-week intervention period, reflected by a post-intervention measurement on Day 43, in which athletes added 15g of a fermented whey protein product to their diet. The primary outcome was based on the self-reported gastrointestinal symptom rating scale (GSRS), and the secondary outcome was based on a daily questionnaire, in which daily GI complaints and exercise occurrences were reported. Tertiary outcomes included a 24-hour diet recall (ASA24) and self-reported diet quality (REAP). Outcomes obtained during baseline (Day 1 and Day 22 average) were compared to those post-intervention (Day 43). Statistical significance was set at P<0.05. A total of n=50 athletes (24.7±4.5 years) with GI issues were included in the study. Five individual items of the GSRS including abdominal pain, acid reflux, bloating, burping, and loose stools reflected significantly lower scores on Day 43 in comparison to baseline (P≤0.028). A total of 78% reported GI complaints at baseline, and 61% of the participants reported lower GI complaints on Day 43 after supplementation in comparison to baseline (P=0.004). Further research is needed to explore the potential benefits of a hydrolyzed and fermented whey protein with prebiotics in a more controlled setting among athletic populations.

Sleep is an essential biological requirement to sustain human life and a critical component for athletes. There has been a rising trend for poor sleep in the general population and the problem persists as well within the athletic population. Research has demonstrated numerous benefits of optimized sleep on athletic performance and athlete wellness. Further investigation of potential dietary strategies to improve self-perceived sleep quality is warranted. This study examined the differences in perceived sleep quality and wellness between a 3-week baseline period and after a 3-week supplementation period, in which participants consumed a dietary supplement containing fermented whey protein + galacto-oligosaccharides (GOS) + casein protein daily. Validated questionnaires, namely, Athens Insomnia Scale (AIS), Physical Health Questionnaire (PHX), Kessler-6 Mental Stress Scale (K6) were used to measure perceived sleep quality and wellness on Day 1, Day 22 and Day 43. Additionally, multiple 24-h dietary recalls (ASA24), and food quality using the validated Rapid Eating Assessments for Participants (REAP) questionnaire, were used to assess dietary patterns throughout the study, while exercise occurrence was tracked through a self-developed daily questionnaire. A total of 54 healthy active adults (age=18-35yrs) experiencing gastro-intestinal (GI) complaints were included in the trial, and 50 participants were included in the final analysis. Significantly lower AIS-8 total scores were found on Day 43 compared to Day 22 while controlled for Day 1 (Day 43: 4.36 ± 3.68 versus Day 22: 5.02 ± 4.11, F=4.379 (1, 50), p=0.042), while no differences were found for wellbeing (p≥ 0.180). Dietary intake, food quality and exercise frequency did not change over time (p≥0.080). These results suggested that a daily protein + GOS supplement was associated with a decrease in AIS-8 total scores suggesting improved perceived sleep quality among athletes after 3 weeks. A controlled research study should confirm these results in the future. More research is required to assess the effects of protein + prebiotic supplementation on sleep parameters among athletes.
