Barrett, The Honors College at Arizona State University proudly showcases the work of undergraduate honors students by sharing this collection exclusively with the ASU community.

Barrett accepts high performing, academically engaged undergraduate students and works with them in collaboration with all of the other academic units at Arizona State University. All Barrett students complete a thesis or creative project which is an opportunity to explore an intellectual interest and produce an original piece of scholarly research. The thesis or creative project is supervised and defended in front of a faculty committee. Students are able to engage with professors who are nationally recognized in their fields and committed to working with honors students. Completing a Barrett thesis or creative project is an opportunity for undergraduate honors students to contribute to the ASU academic community in a meaningful way.

Forty collegiate gymnasts were recruited for a nutrition and health study. Participants must have been at least eighteen years old at Arizona State University (ASU) in the club or team gymnastics program. The Institutional Review Board (IRB) reviewed and accepted my survey in order to hand out to the gymnasts.

Forty collegiate gymnasts were recruited for a nutrition and health study. Participants must have been at least eighteen years old at Arizona State University (ASU) in the club or team gymnastics program. The Institutional Review Board (IRB) reviewed and accepted my survey in order to hand out to the gymnasts. The ASU club and team coach and the ASU study team also approved my survey. As soon as the survey was approved, it was emailed to all of the gymnasts. ASU gymnasts were surveyed on nutritional knowledge and personal health. Subjects answered a quiz on nutrient needs and serving sizes. Personal questions consisted of height, weight, injuries, body image, and typical meal plans. Gymnasts were given a $10 compensation to increase the participation. We found that only 16% of gymnasts surveyed scored a 70% or higher on their nutritional knowledge. Although these gymnasts do not have adequate knowledge, the majority consume a healthy diet. Diets included fruits, vegetables, protein-rich foods, and few high fat and sugary foods. Four of the gymnasts had one or fewer injuries in the past two years, although, four gymnasts also had three or more injuries. No correlation was found between diet and injuries. There was also no correlation between the gymnast's nutritional knowledge and their health.

A key component to American weddings is the wedding cake and the number of customs associated with it. The History, Evolution, and Development of Wedding Cakes is a creative project that hopes to answer why the wedding cake is such an iconic item and what it represents. A historical study details the evolution from its origin to present day while a comparison of wedding cakes (or wedding cake analogs) from other cultures explores their role(s) across the globe. It was found that while little regard is given to the symbolism of the wedding cake today, its presence persists in some shape or form as it continues to evolve. Cultural variations were recreated to reflect personal interpretations of contemporary designs in addition to an original design of a contemporary-rustic American wedding cake.

Nutritional support offered before and during chemotherapy treatment is proven to improve the outcomes of treatment (Bernhardson, 2016). This project seeks to examine current forms of nutritional support offered to patients, as well as the models of care and support teams in cancer treatment centers. The basis for this project incorporated personal experiences at M.D. Anderson Cancer Center in Gilbert, Arizona as well as research into the work of clinical oncology dietitians. An intense interest in food videos and blogs also informed this project, and was incorporated in the hope of providing chemotherapy patients a platform to discover recipes specific to their unique situation. The combination of this research was utilized to create several videos which demonstrated specific recipes beneficial for patients as well as creating a platform for this particular population. While nutritional support can take multiple forms, the focus of nutritional support surrounds symptom management. The common side effects of chemotherapy such as nausea, mucositis (mouth sores), and extreme weight loss were taken into account. Recipes were formulated to directly address these conditions and each recipe was broken down into the benefits of both macronutrients and micronutrients. In addition to formulating specific recipes and videos, barriers to proper nutritional support were examined and explained. These barriers include understaffing of clinical dietitians at cancer treatment centers, a patient's lack of transportation to and from treatments, as well as an overwhelming viewpoint that nutritional support is only required for extreme cases of malnutrition. Combatting these barriers and offering more forms of nutritional support will help to increase a patient's positive response to treatment, manage their symptoms, and improve their overall quality of life.

A number of individuals are turning to a veganism. In 2017, six percent of Americans identified as vegan, up from only one percent in 2014. A vegan

People have become increasingly perceptive in their health and well being. As a result, people are directing their attention to unconventional diet choices. A number of individuals are turning to a veganism. In 2017, six percent of Americans identified as vegan, up from only one percent in 2014. A vegan diet has been scientifically shown to have many health benefits when compared to the average western diet, which is typically inadequate in fruits, vegetables, legumes, whole grains, and contains excessive amounts of processed foods, alcohol, salt, red meat, and sugar. With its gain in popularity, and more people adopting the diet, comes a lot of controversies. There are many who support and advocate for it, including a number of celebrities, and health organizations like the American Diabetes Association and USDA. However, many people remain skeptical about its purpose and proposed benefits. There is a general lack of knowledge when it comes to veganism. The purpose of this study was to assess the attitudes and beliefs held by college students at Arizona State University about a vegan diet. A survey was prepared and later distributed to students of different majors across Arizona State University. A total of 100 students completed the survey. The results revealed that ASU students had varying beliefs in regard to a vegan diet, some accurate beliefs, and other inaccurate beliefs. In general, the vegan participants tend to be more accurate in their knowledge of a vegan diet, however, no statistical differences were found among the vegan and non-vegan (includes vegetarian, pescatarian and omnivorous) participants. Supplemental research should include a larger sample of vegan participants and should examine behavioral differences among vegans and non-vegans.

This study aims to explore the prevalence of smartphone, smartwatch, and fitness tracker ownership among college students, and compare the popularity of each device in tracking health-related habits such as physical activity, eating, and sleep. In addition, this study aims to analyze the effectiveness of each device for achieving personal health goals in all three categories. Research for this study was conducted using an Institutional Review Board (IRB) approved survey that was distributed electronically to various Greek and student organizations around Arizona State University campuses. In total, 183 responses were considered, with participants ranging from ages 18 to 23. Participants were required to own or possess a smartphone to be eligible to complete the survey. After seven days of data collection, the results were then analyzed using Qualtrics. The results revealed that smartwatch and fitness tracker ownership is not prevalent within the Arizona State University demographic. In addition, after comparing device popularity across each habit-tracking category, it is apparent that the smartphone is the most used device for tracking. Finally, when looking at device effectiveness in relation to achieving health goals, smartwatches consistently scored higher than smartphones. Supplemental research should be conducted to further explore the prevalence and effectiveness of habit tracking. This research should include a larger sample size and a more evenly spread gender demographic.

Injury Prevention of Young Adult Competitive Athletes Abstract: This literature review covers many aspects of health and injury prevention that affects the young adult population. This review will begin to formulate a general guideline for sustaining performance while minimizing the incidence for injury. This population is specifically narrowed down to competitive athletes between the ages of 16-22. Some of the topics covered in this paper are the effects of macro-nutrients and micro-nutrients such as iron, calcium, vitamin D and vitamin C, on the body. Along with relating nutrition to lowering the risk of injury, there are also other topics covered such as sleep, stress relief in the form of binaural sounds, training and over-training. Nutrition topics include carbohydrates, proteins and fats, which are then split into their respective roles inside the body. These macro-nutrients are also associated with recovery and the timing and quantity consumed can be at optimal levels for competitive athletes based on gender, age and size. The vitamins and minerals discussed are also important factors in injury prevention related to bone, ligament and muscle strength. These micro-nutrients are also related to hormone regulation and immune system response which are necessary in mitigating the risk of injury in the population being analyzed. Finally, there is a training section of this literary review which covers monitoring external and internal loads experienced by the athletes, movement patterns as well as flexibility, and how to respond to over-training syndrome and overreaching in young adult athletes. Creating a balance between all aspects covered will result in a high likelihood of reducing the risk for injury in the young adult population.

For this creative project, the student's overarching objective was to establish a signature dish and to learn how to cook. She acquired a cookbook fit for novice cooks, "Eat What You Love" by Marlene Koch, which focused on healthy eating through the reduction of sugar and fat. The student completed

For this creative project, the student's overarching objective was to establish a signature dish and to learn how to cook. She acquired a cookbook fit for novice cooks, "Eat What You Love" by Marlene Koch, which focused on healthy eating through the reduction of sugar and fat. The student completed thirty recipes including two appetizers, five breakfast entrees, five lunch entrees, twelve dinner entrees, and six desserts. Her culinary ventures were then detailed through a blog site the student had created. Blog posts included a brief description primarily of the portion size, a nutritional analysis of the recipe, enjoyable aspects of the dish, whether something went wrong, what was learned from creating the dish, as well as a photograph of the prepared dish. A large element of this project focused upon food photography and obtaining images that made the created dish look appealing. It was found that the best images were taken in natural lighting with good compositions and pops of color. In order to gain readership, the student developed an Instagram account where she would post images of the food and provide links to her blog entries and recipes. Through this means, she was able to obtain over 100 followers to her blog. In addition to learning how to cook, the student sought out to understand components of a healthy diet and how each nutrient contributes to an individual health. This objective is detailed throughout the course of the paper as well as several other objectives. The student also studied how social media has impacted the way in which we share food and our knowledge of food. Additionally in this paper, the student evaluated the evolution of the USDA Dietary Guidelines and their effectiveness over time. From this project, the student walked away with new knowledge about nutritional eating and lifestyle habits that she will retain for years to come. She hopes that this project will encourage other students to take on their own culinary adventure.

This thesis project will discuss how the three macronutrients, protein, carbohydrate and fat, benefit the body and what happens when the body is lacking in any of them. It also delves into micronutrients and supplements and how those can aid in the recovery process following an injury. Inflammation and sleep as well as mood disturbances are also explained. Meal options are available in the second half of this paper displaying pictures of nutritional meals along with their ingredients, instructions and calories. This project displays how a lack of protein can decrease muscle protein synthesis, how carbohydrate deficiency can lead to fatigue and more injury and how Omega-3 fatty acids are more beneficial than Omega-6 fatty acids. In addition, the paper discusses how vitamins, such as vitamin D and C, are important in providing bone strength and preventing excess inflammation. Supplements are reported to be beneficial, however, a disadvantage of consuming nutrients from a synthetic source can rob the athlete of a healthy mixture of nutrients and minerals. Overall, consumption of proper nutrients can aid in the recovery process following an injury and sleep is an important factor that should also be considered while the body heals.

The scope of this project is a combination of material science engineering and mechanical engineering. Overall, the main goal of this project is to develop a lightweight concrete that maintains its original strength profile. Initial research has shown that a plastic-concrete composite could create a more lightweight concrete than that made using the typical gravel aggregate for concrete, while still maintaining the physical strength that concrete is known for. This will be accomplished by varying the amount of plastic in the aggregate. If successful, this project would allow concrete to be used in applications it would typically not be suitable for.<br/>After testing the strength of the concrete specimens with varying fills of plastic aggregate it was determined that the control group experienced an average peak stress of 2089 psi, the 16.67% plastic group experienced an average peak stress of 2649 psi, the 33.3% plastic group experienced an average peak stress of 1852 psi, and the 50% plastic group experienced an average stress of 924.5 psi. The average time to reach the peak stress was found to be 12 minutes and 24 seconds in the control group, 15 minutes and 34 seconds in the 16.7% plastic group, 9 minutes and 45 seconds in the 33.3% plastic group, and 10 minutes and 58 seconds in the 50% plastic group. Taking the average of the normalized weights of the cylindrical samples it was determined that the control group weighed 14.773 oz/in, the 16.7% plastic group weighed 15 oz/in, the 33.3% plastic group weighed 14.573 oz/in, and the 50% plastic group weighed 12.959 oz/in. Based on these results it can be concluded that a small addition of plastic aggregate can be beneficial in creating a lighter, stronger concrete. The results show that a 16.7% fill ratio of plastic to rock aggregate can increase the failure time and the peak strength of a composite concrete. Overall, the experiment was successful in analyzing the effects of recycled plastic aggregate in composite concrete. <br/>Some possible future studies related to this subject material are adding aluminum to the concrete, having better molds, looking for the right consistency in each mixture, mixing for each mold individually, and performing other tests on the samples.
