In females, critical hormonal shifts occur during puberty, menstruation, pregnancy, and <br/>menopause. The fluctuating ovarian hormone levels across a woman’s lifespan likely contribute <br/>to inflammatory responses driven by the immune system, which is regulated by a variety of <br/>physiological pathways and microbiological cues. Pregnancy in particular results in drastic <br/>changes in circulating hormone profiles, and involves a variety of physiological changes, <br/>including inflammatory responses of the immune system. There is evidence that these effects are <br/>mediated, in part, by the significant hormone fluctuations that characterize pregnancy and <br/>postpartum periods. This thesis highlights and synthesizes important physiological changes <br/>associated with pregnancy, and their potential implications on cognitive and brain aging in <br/>women. A tertiary model of cognition is presented depicting interactions between hormonal <br/>history, reproductive history, and immune functions. This research is important to create a better <br/>understanding of women’s health and enhance medical care for women throughout pregnancy <br/>and across reproductive hormone shifts across the lifespan.

There are several visual dimensions of food that can affect food intake, example portion size, color, and variety. This dissertation elucidates the effect of number of pieces of food on preference and amount of food consumed in humans and motivation for food in animals. Chapter 2 Experiment 1 showed that rats preferred and also ran faster for multiple pieces (30, 10 mg pellets) than an equicaloric, single piece of food (300 mg) showing that multiple pieces of food are more rewarding than a single piece. Chapter 2 Experiment 2 showed that rats preferred a 30-pellet food portion clustered together rather than scattered. Preference and motivation for clustered food pieces may be interpreted based on the optimal foraging theory that animals prefer foods that can maximize energy gain and minimize the risk of predation. Chapter 3 Experiment 1 showed that college students preferred and ate less of a multiple-piece than a single-piece portion and also ate less in a test meal following the multiple-piece than single-piece portion. Chapter 3 Experiment 2 replicated the results in Experiment 1 and used a bagel instead of chicken. Chapter 4 showed that college students given a five-piece chicken portion scattered on a plate ate less in a meal and in a subsequent test meal than those given the same portion clustered together. This is consistent with the hypothesis that multiple pieces of food may appear like more food because they take up a larger surface area than a single-piece portion. All together, these studies show that number and surface area occupied by food pieces are important visual cues determining food choice in animals and both food choice and intake in humans.

ASU4Food's objective is to increase the visibility of the statewide hunger crisis among Arizona State University's campuses, and to raise monetary and food donations to alleviate this issue. By collaborating with a multitude of organizations both on and off-campus, we aim to become a well-known, powerful, and stable student organization.

ASU4Food's objective is to increase the visibility of the statewide hunger crisis among Arizona State University's campuses, and to raise monetary and food donations to alleviate this issue. By collaborating with a multitude of organizations both on and off-campus, we aim to become a well-known, powerful, and stable student organization. This thesis will cover the endeavors of Elana Niren, Theresa Reckamp, and Sidath Wijetunga regarding the maintenance, growth, and expansion of ASU4Food. ASu4Food has been striving to gain connections and the reputation that would allow it to become an "umbrella organization" with the ability to coordinate all of the food-raising endeavors at ASU. The effects of our actions can be seen in the club's stability. We are now being sought out by organizations such as the Salvation Army, Sunflower Farmers Market, and Shutterfly. However, there is still more work to be done, and we hope that this thesis will act as a guide for future generation of club members and officers, and that ASU4Food will continue improving in activity and efficiency for many years to come.

This thesis explores the power of food to transcend cultural and racial borders and to act as a common ground, bringing people of all different backgrounds together. Through globalization, there is an increased movement of people from their homeland to different regions around the world and with this migration comes the spread of their culture and cuisine to new areas. This spreading of culture often creates friction and tension amongst other cultures, however as this thesis argues, with increased diversity, there is the great potential for greater interaction with other cultures and therefore greater appreciation. The key aspect of this thesis is the ways in which food can be used as a tool to overcome racial barriers and serve as a means of positive expression of a culture. I hope to show that by engaging with a culture through its cuisine, one can arguably build a greater appreciation for that culture and therefore lower their preconceived notions and stereotypes.

The M&G Drive is a proposed venture project lead by Barrett seniors, Elijah Smith and Jenna Fitzgerald. This project aims to educate Arizona State University (ASU) students on the issues of food insecurity around the Phoenix valley and facilitate their involvement in helping alleviate this pressing social matter. Scientific research has shown significant inverse relationships between food insecurity and the following: mental and physical health, social skills, and academic achievement. As the largest public university in the nation, Arizona State holds a self-ascribed responsibility for the health of its communities. In order to address this issue on behalf of Arizona State and from the standpoint of college students, this proposed venture will encourage the ASU student population to reallocate their unused M&G Dollars (ASU’s on-campus currency) to go toward this cause. Rather than being absorbed back by the university system, unused M&G Dollars can instead be used to purchase non-perishables that will then be donated to the local Phoenix community in order to help fight against food insecurity.

For this study, I visited twenty Sprouts Farmers Market locations across the Phoenix-metro area to determine the company’s in-store strategy to make their locations a destination that customers pleasantly anticipate visiting. As a business student myself and a Sprouts employee, I have familiarity with the company and desired to learn

For this study, I visited twenty Sprouts Farmers Market locations across the Phoenix-metro area to determine the company’s in-store strategy to make their locations a destination that customers pleasantly anticipate visiting. As a business student myself and a Sprouts employee, I have familiarity with the company and desired to learn more about why Sprouts stores are so appealing and fun to visit. My method was to determine a representative sample of stores in the “Valley” to visit. At each location, I requested to speak with a manager and asked him or her four questions about that particular store. I also spent approximately forty minutes examining each location and observing details about each store according to a precomposed list of things to particularly notice but with room to add details regarding each store’s unique elements and commonalities with the other locations. The results of this study were rewarding, as at nineteen of the twenty stores I was able to speak with a manager who graciously answered my questions. I collected much data from these interviews and from my own observations. The most significant conclusion I reached was that Sprouts Farmers Market promotes health, natural-eating, freshness, and friendliness in every area. From pleasant employees to natural lighting to unique brands, Sprouts endeavors to carry products that meet the special dietary needs of each customer no matter how general or specific they may be. Another key discovery I made is that the entire company and each individual store revolves around the produce department. Because this is the core of the business, extra measures are taken to promote it, such as frequent produce deliveries to ensure fresh products are on the shelf, extra lighting in that part of the store, and frequent stocking and sweeping to keep the area full and clean. Additionally, the produce department has ample signage denoting organic and local products and information signs about how to consume various produce items, including information to learn about the farmers who grew the goods. Beyond these key elements of Sprouts Farmers Market, an intangible element exists which sets Sprouts apart from its competitors, and that is the personal touch. Sprouts’ employees are friendly, welcoming, and helpful. They are encouraged to ask customers if they need assistance and to inquire how their day is going. The employees are also educated on the products they sell as well as various dietary trends so that they can help shoppers find products that fit their needs. This warmth, helpfulness, and friendliness trickles down from the top management at each store and is communicated to the customers through their interactions with the employees. This personal touch is so important to Sprouts Farmers Market that the company even has a program to encourage employee helpfulness. It is called the “Yes” Program, and essentially empowers employees and managers to authorize price adjustments, exchanges, returns, and the like to assist and serve shoppers with exceptional customer service and provide whatever is necessary to make the customers happy and desirous to become repeat shoppers at Sprouts Farmers Market.

Aging and the menopause transition are both intricately linked to cognitive changes

during mid-life and beyond. Clinical literature suggests the age at menopause onset can differentially impact cognitive status later in life. Yet, little is known about the relationship between behavioral and brain changes that occur during the transitional stage into the post-menopausal state. Much of the pre-clinical work evaluating an animal model of menopause involves ovariectomy in rodents; however, ovariectomy results in an abrupt loss of circulating hormones and ovarian tissue, limiting the ability to evaluate gradual follicular depletion. The 4-vinylcyclohexene diepoxide (VCD) model simulates transitional menopause in rodents by selectively depleting the immature ovarian follicle reserve and allowing animals to retain their follicle-deplete ovarian tissue, resulting in a profile similar to the majority of menopausal women. Here, Vehicle or VCD treatment was administered to ovary-intact adult and middle-aged Fischer-344 rats to assess the cognitive effects of transitional menopause via VCD-induced follicular depletion over time, as well as to understand potential interactions with age, with VCD treatment beginning at either six or twelve months of age. Results indicated that subjects that experience menopause onset at a younger age had impaired spatial working memory early in the transition to a follicle-deplete state. Moreover, in the mid- and post- menopause time points, VCD-induced follicular depletion amplified an age effect, whereby Middle-Aged VCD-treated animals had poorer spatial working and reference memory performance than Young VCD-treated animals. Correlations suggested that in middle age, animals with higher circulating estrogen levels tended to perform better on spatial memory tasks. Overall, these findings suggest that the age at menopause onset is a critical parameter to consider when evaluating learning and memory across the transition to reproductive senescence. From a translational perspective, this study informs the field with respect to how the age at menopause onset might impact cognition in menopausal women, as well as provides insight into time points to explore for the window of opportunity for hormone therapy during the menopause transition to attenuate age- and menopause- related cognitive decline, and produce healthy brain aging profiles in women who retain their ovaries throughout the lifespan.

Progestogens, such as progesterone (P4), medroxyprogesterone acetate (MPA), and micronized progesterone (mP4), are given to ovary-intact women during the transition to menopause to attenuate heavy uterine bleeding and other symptoms. Both progesterone and MPA administration have been shown to impair cognition in ovariectomized (Ovx) rats compared to vehicle-treated controls. mP4,

Progestogens, such as progesterone (P4), medroxyprogesterone acetate (MPA), and micronized progesterone (mP4), are given to ovary-intact women during the transition to menopause to attenuate heavy uterine bleeding and other symptoms. Both progesterone and MPA administration have been shown to impair cognition in ovariectomized (Ovx) rats compared to vehicle-treated controls. mP4, however, has yet to be investigated for cognitive effects in a preclinical setting. Further, progestogens affect the GABA (-aminobutyric acid) ergic system, specifically glutamic acid decarboxylase (GAD) the rate limiting enzyme necessary for synthesizing GABA. The goal of this experiment was to investigate the cognitive impact of P4, MPA, and mP4, in an ovary-intact transitional menopause model using 4-vinylcyclohexene diepoxide (VCD) and assess whether these potential changes were related to the GABAergic system. One group of rats received vehicle injections, and the remainder of the groups received VCD to induce follicular depletion, modeling transitional menopause in women. Vehicle or hormone administration began during perimenopause to model the time period when women often take progestogens alone. Rats then underwent testing to assess spatial working and reference memory in the water radial-arm maze (WRAM) and spatial reference memory in the Morris water maze (MWM). Results indicate that P4 and MPA improved learning for working memory measure, but only MPA impaired memory retention in the WRAM. For the WRAM reference memory measure, VCD only treated rats showed impaired learning and memory retention compared to vehicle controls; progestogens did not impact this impairment. Although GAD expression did not differ between treatment groups, in general, there was a relationship between GAD expression and WRAM performance such that rats that tended to have higher GAD levels also tended to make more WRAM working memory errors. Thus, while P4 and MPA have been previously shown to impair cognition in an Ovx model, giving these hormones early in an ovary-intact perimenopause model elicits divergent effects, such that these progestogens can improve cognition. Additionally, these findings suggest that the cognitive changes seen herein are related to the interaction between progestogens and the GABAergic system. Further investigation into progestogens is warranted to fully understand their impact on cognition given the importance of utilizing progestogens in the clinic.
