The concept of this thesis is the importance of dietary fiber and how it can be further integrated into the American diet. The adequate intake (AI) of fiber for men and women is thirty-eight and twenty-five grams respectively. I was inspired to focus my research on increasing fiber intake because the typical American consumes fifteen grams of dietary fiber which is well below the AI. The purpose of this project was to inform individuals on the importance of dietary fiber, but also to create and compile recipes which would make it easy for people to increase their intake of dietary fiber. There are two parts to this project: a literature review and a cookbook. The literature review discusses the health benefits of fiber as to how its properties of viscosity and fermentability allow for weight loss, decrease appetite and energy intake, decrease postprandial insulin and glucose levels, impact gut health, lower blood lipid levels in order to protect against atherosclerosis and coronary heart disease, decrease inflammation, and reduce levels of inflammatory marker C-reactive protein. The cookbook provides the ideas for integrating high fiber foods into one's diet. There are three different categories in the cookbook: snacks, lunch and dinner, and breakfast. The snacks and breakfast provide around five grams of fiber per serving, if not more, whereas the lunch and dinner options provide around fifteen grams in a meal. Not only are these recipes high in fiber, but they are also nutrient dense, meaning they provide more than just the listed health benefits in the literature review. Having these recipes and increasing awareness of the benefits which they contain will help individuals to meet the AI of fiber while still enjoying delicious meals.

Beets have a history of bad reputation for not having the most appetizing qualities compared to other vegetables. Despite the nutritional and health benefits of Beta vulgaris rubra (commonly red beetroot or red beets) the potential of this vegetable has yet to be glorified as compared to i.e. Brassica oleracea var. sabellica (kale), or Chenopodium quinoa (quinoa). When considering this root vegetable as a vehicle for providing your body with a source of dietary nitrate, Beta vulgaris rubra can be classified as a functional food. This work dives deeper into the function of Nitric Oxide (NO) within the human body, and explains the potential benefits of consuming red beets. Followed is a proposal for a cookbook focused on dishes containing this vegetable, as well as a sample of recipes varying from breakfast to dinner to dessert. The amount of nitrate provided by each serving of any of the dishes has not been established, and it is rather a creative attempt to shine positive light on this functional food.

Cases of diet-related illnesses are some of the most common illnesses we witness today. From heart disease to type 2 diabetes, from obesity to hypertension, many of these diseases are easily prevented by lifestyle changes. However, it is much easier to instill healthy habits in a population from the start rather than trying to change habits later, even if one's health depends on it. A pastime as simple as cooking allows us to take responsibility for our own health by (quite literally) taking it into our own hands. This is why I chose to write a cookbook for my honor's thesis. More importantly, this is why I chose to write a cookbook geared towards young children. My target audience is 8-11 years old because that's when I first started to cook, and it's a habit that has kept me well to this day. Within this cookbook, readers will find over 30 (mostly) healthy recipes for breakfast, lunch, dinner, snacks, and desserts, complete with written instructions and photographs to aid with meal preparation. My hope is that, during my career, I will be able to publish this book and distribute it to children who might not have an interest in cooking, but can learn basic cooking skills from my book. If kids get working in the kitchen, they might keep cooking as they grow older, which will help them keep control of their health for the better.

The effects of iron and chromium blood concentrations have been linked to blood glucose control in diabetics. It is suggested that iron causes oxidative stress in the beta cells of the pancreas and adipocytes creating insulin insufficiency and resistance. Chromium is believed to increase the action of insulin through its biologically active molecule chromodulin. Both of these mechanisms are not clear. This 20 week case study tests the feasibility of combining iron depletion therapy followed by chromium supplementation to improve insulin sensitivity. This single case study followed a protocol of two blood donations separated by eight weeks followed by chromium supplementation of 250 µg of chromium picolinate once a day four weeks after the second blood donation. Fasting blood draws were taken at baseline, post blood draws and pre and post chromium supplementation. Results were not promising for the first hypothesis of lowering HbA1c, but the results were promising for the second hypothesis of improving insulin sensitivity by lowering the HOMA score.

Objectives: This study examines weight loss strategies (eating, physical activity (PA), or both) adopted by overweight or obese (OWOB) parents and children in relation to age, income, gender, education, and race/ethnicity in a predominantly low-income and high minority sample. We also examine if OWOB parent-child dyads employed the same strategies to lose weight, and how these strategies vary by demographic variables.

Methods: Data was compiled from the New Jersey Childhood Obesity Study (NJCOB). A random digit dial household phone survey was used to select 1,708 households with at least one child aged 3-18 years from five cities in New Jersey. There were 231 OWOB parent-child dyads in this sample. Bivariate and multivariate analyses were performed to determine the demographic variables significantly associated with the type of weight loss strategy chosen.

Results: Males had higher odds of using PA and both eating and PA when compared to females. Higher income adults had higher odds of using all types of weight loss strategies compared to lower income adults. Adults with college education had higher odds of using eating and both eating and PA when compared to those with high school education. Older children (6-11 and 12-19 years) had higher odds of using PA when compared to younger children (2-5 years). Children of foreign-born parents (> 10 years in the US) had higher odds of using eating to lose weight compared to the children of US born parents. Children overall had higher odds of adopting a weight loss strategy if it was also adopted by the parent. In subgroup analysis, parent-child dyads had higher odds of adopting similar strategies among older children (12-19) and among girls, but this association did not hold true for younger children (2-11 years) and among boys for PA.

Conclusion: Older OWOB children (12-19) and female children had higher odds of adopting their parents’ weight loss strategies. Younger children did not follow the same pattern as their parents and among boys concordance was observed only for eating strategies. Results from the study may inform future family-based weight management interventions.

Drinking vinegar is a popularly discussed remedy for relieving heartburn symptom, as can be read on many websites; however, there has been no scientific research or theory to support its efficacy. This randomized, placebo-controlled, double-blind, cross-over research study tested the efficacy of the organic apple cider vinegar, with mother, on alleviation of the heartburn symptom related to Gastro-esophageal reflux disease (GERD). A minimum of one week separated the four trial arms: chili (placebo), antacid after chili meal (positive control), vinegar added to chili, and diluted vinegar after chili meal. Twenty grams of vinegar were used in both vinegar treatments, and 10 grams of liquid antacid were used in the antacid trial. A five-point Likert scale and a 10-cm visual analogue scale (VAS) were used to assess heartburn severity during a 120 minutes testing time. Seven of 15 recruited subjects' data was usable for statistical analysis (age: 39.6 ± 12.2 y, body mass index (BMI): 29.4 ± 4.2 kg/m2, waist circumference: 36.4 ± 4.1 inch). There was no statistically significant difference among the mean and incremental area-under-the-curve (iAUC) heartburn scores among different trials (Likert scale questionnaire p= .259, VAS questionnaire p= .659, iAUC Likert scale p= .184, iAUC VAS p= .326). Seven participants were further divided into antacid responder (n=4) and antacid non-responder groups (n=3). Likert scale mean heartburn score and iAUC data in antacid responder group had significant finding (p= .034 and p= .017 respectively). The significance lay between antacid and 'vinegar added to chili' trials. Effect size was also used to interpret data due to the small sample size: Likert scale: mean heartburn score= .444, iAUC= .425; VAS mean heartburn score= .232, iAUC .611. Effect size for antacid responder group was Likert scale: mean heartburn score= .967, iAUC= .936. Future research is needed to examine whether ingesting organic vinegar benefits alleviation of heartburn symptom related to GERD for people who do not respond well to antacid.

Birds have shown promise as models of diabetes due to health and longevity despite naturally high plasma glucose concentrations, a condition which in diabetic humans leads to protein glycation and various complications. Research into mechanisms that protect birds from high plasma glucose have shown that some species of birds have naturally low levels of protein glycation. Some hypothesize a diet rich in carotenoids and other antioxidants protects birds from protein glycation and oxidative damage. There is little research, however, into the amount of protein glycation in birds of prey, which consume a high protein, high fat diet. No studies have examined the potential link between the diet of carnivorous birds and protein glycation. The overall purpose of this study was to evaluate whether birds of prey have higher protein glycation given their high protein, high fat diet in comparison to chickens, which consume a diet higher in carbohydrates. This was accomplished through analyses of serum samples from select birds of prey (bald eagle, red-tailed hawk, barred owl, great horned owl). Serum samples were obtained from The Raptor Center at the University of Minnesota where the birds of prey consumed high protein, high fat, non-supplemented diets that consisted of small animals and very little to no carbohydrate. Serum was also obtained from one chicken for a control, which consumed a higher carbohydrate and antioxidant-rich diet. Glucose, native albumin glycation and antioxidant concentrations (uric acid, vitamin E, retinol and several carotenoids) of each sample was measured. Statistical analyses showed significant between group differences in percent protein glycation amongst the birds of prey species. Glycation was significantly higher (p < 0.001) in bald eagles (23.67 ± 1.90%) and barred owls (24.28 ± 1.43%) compared to red-tailed hawks (14.31 ± 0.63%). Percent glycation was higher in all birds of prey compared to the chicken sample and literature values for chicken albumin glycation. Levels of the carotenoid lutein were significantly higher in bald eagles and barred owls compared to great horned owls and red-tailed hawks and the carotenoids beta-cryptoxanthin and beta-carotene were significantly greater in bald eagles compared to red-tailed hawks and great horned owls.

Objective: To determine whether acetic acid dissociates in the addition of sodium chloride and describe a flavorful vinaigrette that maintains the functional properties of acetic acid.

Design: Phase I - Ten healthy subjects

Background: Acetic acid in vinegar has demonstrated antiglycemic effects in previous studies; however, the mechanism is unknown.

Objective: To determine whether acetic acid dissociates in the addition of sodium chloride and describe a flavorful vinaigrette that maintains the functional properties of acetic acid.

Design: Phase I - Ten healthy subjects (23-40 years) taste tested five homemade vinaigrette and five commercial dressings. Perceived saltiness, sweetness, tartness, and overall tasted were scored using a modified labeled affective magnitude scale. Each dressing was tested three times for pH with a calibrated meter. Phase II – Randomized crossover trial testing six dressings against a control dressing two groups of nine healthy adult subjects (18-52 years). Height, weight and calculated body mass index (BMI) were performed at baseline. Subjects participated in four test sessions each, at least seven days apart. After a 10-hour fast, participants consumed 38g of the test drink, followed by a bagel meal. Capillary blood glucose was obtained at fasting, and every 30 minutes over a 2-hour period the test meal.

Results: Dressing pH reduced as sodium content increased. In the intervention trials, no significant differences were observed between groups (p >0.05). The greatest reduction in postprandial glycemia (~21%) was observed in the dressing containing 200 mg of sodium. Effect size was large in both group 1 (η2=0.161) and group 2 (η2=0.577).

Conclusion: The inclusion of sodium into acetic acid may impair its ability to attenuate blood glucose after a meal.

Currently, there has been limited research on evaluating the social media use and

competency level of registered dietitian
utritionists (RD/N). With health information increasingly sought on social media, it is imperative to understand the social media competency of health professionals. The social media use, reach, and competency level of a nationwide RD/N sample was assessed utilizing an online survey. The sample (n=500) while mostly female (97%) was representative of RD/Ns compared to the nationwide statistics from the Commission on Dietetic Registration. The sample included RD/Ns from forty-six states with California (n=44), New York (n=42), and Texas (n=34) having the largest proportion of respondents. The majority of RD/Ns engage in social media for personal use (92.4%) and 39.2% engage for professional use. One hundred and twenty-five RD/Ns reported 777 ± 1063 (mean ± SD) social media followers. As compared to non-millennial RD/Ns, millennial RD/Ns engaged significantly more in social media for personal and professional use (+10% and +13.5% respectively, p<0.001) and scored significantly higher for social media competency (p<0.001). Additionally, food and nutrition management and consultant/private practice/industry RD/Ns had significantly higher competency scores than clinical RD/Ns (p=0.015 and p=0.046, respectively). RD/Ns who use social media personally and professionally had a significantly higher competency score than RD/Ns who did not (p<0.001). There were significant associations of Facebook, Twitter, total followers and total average followers with the social media competency score (r=0.265, 0.404, 0.338, & 0.320, respectively) in RD/Ns. Specifically, the social media competency score, was found to explain 16% of the variation in the number of Twitter followers and 10% of the variation in the average number of followers by platform. These data suggest an opportunity to increase RD/Ns’ social media reach (i.e. following) by improving competency level.

There are limited studies exploring the direct relationship between coconut oil and cholesterol concentrations. Research in animals and a few intervention trials suggest that coconut oil increases the good cholesterol (high density lipoprotein, HDL) and thus reduces the risk of cardiovascular disease. Preliminary research at Arizona State University (ASU) has found similar results using coconut oil as a placebo, positive changes in HDL cholesterol concentrations were observed.

The goal of this randomized, double blind, parallel two arm study, was to further examine the beneficial effects of a 2g supplement of coconut oil taken each day for 8 weeks on cholesterol concentrations, specifically the total cholesterol to HDL cholesterol ratio, compared to placebo.

Forty-two healthy adults between 18-40 years of age, exercising less than 150 minutes each week, non smoking, BMI between 22-35 and not taking any medications that could effect blood lipids were recruited from the ListServs at ASU. Participants were randomized to receive either a placebo capsule of flour or a coconut oil capsule (Puritan’s Pride brand, coconut oil softgels, 2g each) and instructed to take the capsules for 8 weeks.

Results indicated no significant change in total cholesterol to HDL ratio between baseline and 8 weeks in the coconut oil and placebo groups (p=0.369), no significant change in HDL (p=0.648), no change in LDL (p=0.247), no change in total cholesterol (p=0.216), and no change in triglycerides (p=0.369).

Blood lipid concentrations were not significantly altered by a 2g/day dosage of coconut oil over the course of 8 weeks in healthy adults, and specifically the total cholesterol to HDL ratio did not change or improve.
