"If we really believe in food, we must do something about it, for our voices should be raised above the rest," James Beard said. Today, the word "sustainable" is being linked to almost every facet of our lives. Everything from restaurants to cars to school supplies are marketed as green or sustainable. Businesses have a lot to gain if they are environmentally conscious (Friedman, 2017). Companies that genuinely care about the planet cultivate positive reputations. Needless to say a company's brand and reputation are arguably the most important differentials amongst its competition. Additionally, a company's social responsibility goes hand in hand with talent retention. Companies that care about their staff and the community are more likely to recruit employees that will be advocates of the product and business (Friedman, 2017). A healthy work culture encourages productivity, recruitment and retention. Unfortunately some businesses stretch the truth and make bold sustainability claims in order to reap the above benefits. When it comes to the food service industry, which restaurants are actually living up to the claim of being sustainable? I embarked upon a journey to find the restaurants and chefs that are creating exquisite dishes while protecting the environment and preserving the food chain system. Initially I developed a list of 30 prospective restaurants based upon published material bringing awareness to their environmentally conscious initiatives. Ultimately I selected three diverse restaurants from the list that successfully met the sustainability requirements. I utilized criteria established by The Sustainable Restaurant Association (SRA) as my guideline to evaluate the establishments (Our Sustainability Framework). I immersed myself in the restaurants, camera in hand, to discover more about the ecofriendly food movement in Arizona. I created a YouTube channel where I posted all of my edited film in order to heighten awareness of these socially and environmentally responsible establishments. The vlog series features a different restaurant in each episode highlighting the sustainable culinary and business concepts as well as the savory items on the menu. During this quest I discovered how these restaurants have remained successful while minimizing their ecological footprint. These establishments can serve as a guide to other chefs and business owners who are looking to accomplish the same feats.

Space microbiology, or the study of microorganisms in space, has significant applications for both human spaceflight and Earth-based medicine. This thesis traces the evolution of the field of space microbiology since its creation in 1935. Beginning with simple studies to determine if terrestrial life could survive spaceflight, the field of space microbiology has grown to encompass a substantial body of work that is now recognized as an essential component of NASA' research endeavors. Part one provides an overview of the early period of space microbiology, from high-altitude balloon and rocket studies to work conducted during the Apollo program. Part two summarizes the current state of the field, with a specific focus on the revolutionary contributions made by the Nickerson lab at the Biodesign Institute at ASU using the NASA-designed Rotating Wall Vessel (RWV) Bioreactor. Finally, part three highlights the research I've conducted in the Nickerson lab, as well as continuing studies within the field of space microbiology.

A city based on tourism, military installations, agriculture, and home to the first landing of Jamestown colonists, Virginia Beach boasts 28 miles of coastline along the Chesapeake Bay and Atlantic Ocean. Comparable to other beaches worldwide, the utter volume of visitors has taken its toll on the city, resulting in unsightly destruction and pollution. It is not unusual to read or hear about marine animals dying from eating or being trapped by waste that is deposited into oceans, or how oil spills are harmful to marine mammals, birds, and fish; yet somehow, it is uncommon to come upon the mentioning of butt litter, the most frequently littered item on Earth. Cigarette butts are strewn about the Virginia Beach boardwalk, resort strip, and the beach. In 2014, Clean Virginia Waterways collected more than 47,600 butts along streams, rivers, bays, and coastlines (CVW, 2015). With no smoking restrictions on the beach (or boardwalk,) tourists and local beachgoers alike frequently discard their butts on the sand and face no known consequences. Small but mighty, both smoked and unsmoked butts have severe impacts on waterways, economies, air quality, and public health. An economic analysis found that cities the size of San Francisco spend, on average, between $500,000 and $6 million annually to keep their beaches, streets, and parks clear of cigarette litter (Schneider et al., 2011).

This paper examines strategies to:
1. Drastically reduce butt litter within the city - Disposable/pocket ashtrays, additional butt/ash receptacles. 2. Increase community awareness on the economic impacts of litter - Organized cleanups, advertisements /marketing, partnerships with local NGOs.
3. Enhance citations and alternative penalties for those who discard their butts on the sand.
Additionally, this paper aims to discuss the potential implementation of a beach-wide smoking ban.

Fish consumption advisories are important to the protection of human health but are not often widely communicated nor systematically or comprehensively conducted. The objective of this thesis is to explore the strengths and weaknesses of current fish consumption advisory programs in the US and Canada, providing a comparison between the two countries. The US and Canada were chosen because the two countries are relatively similar in socio-economic makeup as well as in their state vs. federal regulatory setup, allowing for easier comparison. At the sub-federal level, Arizona was chosen to serve as a case study for the US, and Nova Scotia as a case study for Canada. To compare each country, fish consumption advisory programs were broadly described across the 50 US states and 13 Canadian provinces and territories to provide a full understanding of the variation in such programs within each country. In addition to comparison across states and provinces, opportunities and challenges for policy correction to strengthen fish consumption advisory programs will be provided, including suggestions on how the US and Canada can learn from each other in creating better environmental policy. Policy is addressed as a means of improving fish consumption advisory programs because without state or federal requirements to monitor fish tissue for contaminants of concern across the US and Canada, there is no guarantee human health and environmental justice will remain protected in either country. Potential global sources of enhanced environmental policy will be provided as examples of further opportunities for the US and Canada to improve fish consumption advisory program policies.

Food production and consumption directly impacts the environment and human health. Protein in particular has significant cultural and health implications, and how people make decisions about what type of protein they eat has not been studied directly. Many decision tools exist to offer recommendations for seafood, but neglect livestock or plant protein. This study attempts to address these shortcomings in food decision science and tools by asking the questions: 1) What qualities of a dietary protein-based decision tool make it effective? 2) What do people consider when making decisions about what type of protein to consume? Using literature review, meta-analysis, and surveys, this study attempts to determine how the knowledge gained from answering these questions can be used to develop an electronic tool to engage consumers in making sustainable and healthy decisions about protein consumption. The data show that, given environmental and health information about the protein types, people in the sample of farmers market shoppers are more likely to purchase wild salmon and organically grown soybeans, and less likely to purchase grain-fed beef. However, the order of preference among the six types of protein did not change. Additional results suggest that there is a disconnect between consumers and sources of dietary protein, indicating a need for improved education. Inconsistency in labeling and information regarding protein types is a large source of confusion for consumers who participated in the survey, highlighting the need for transparency. Results of this study suggest that decisions tools may help improve decision making, but new ways of using them need to be considered to achieve this.

Environmental, Human Health, and Societal Impacts of Nanosilver and Ionic Silver Used in Industrial and Consumer Products

Engineered nanomaterials (ENMs) are added to numerous consumer products to enhance their effectiveness, whether it be for environmental remediation, mechanical properties, or as dietary supplements. Uses of ENMs include adding to enhance products, carbon for strength or dielectric properties, silver for antimicrobial properties, zinc oxide for UV sun-blocking properties, titanium dioxide for photocatalysis, or silica for desiccant properties. However, concerns arise from ENM functional properties that can impact the environment and a lack of regulation regarding ENMs leads to potential public exposure to ENMs and results in ill-informed public or manufacturer perceptions of ENMs. My dissertation evaluates the environmental, human health, and societal impacts of using ENMs, with a focus on ionic silver and nanosilver, in consumer and industrial products. Reproducible experiments served as functional assays to assess ENM distributions among various environmental matrices. Functional assay results were visualized using radar plots and aid in a framework to estimate likely ENM disposition in the environment. To assess beneficial uses of ENMs, bromide ion removal from drinking waters to limit disinfection by-product formation was studied. Silver-enabled graphene oxide materials were capable of removing bromide from water, and exhibited less competition from background solutes (e.g. natural organic matter) when compared against solely ionic silver addition to water for bromide removal. To assess complex interactions of ENMs with the microbiome, batch experiments were performed using fecal samples spiked with ionic silver or commercial dietary silver nanoparticles. Dietary nanosilver and ionic silver exposures to the fecal microbiome for 24 hours reduce short chain fatty acid (SCFA) production and changes the relative abundance of the microbiota. To understand the social perceptions of ENMS, statistically rigorous surveys were conducted to assess related perceptions related to the use of ENMs in drinking water treatment devices the general public and, separately, industrial manufacturers. These stakeholders are influenced by costs and efficiency of the technologies, consumer concerns of the safety of technologies, and environmental health and safety of the technologies. This dissertation represents novel research that took an interdisciplinary approach, spanning from wet-lab engineering bench scale testing to social science survey assessments to better understand the environmental, human health, and societal impacts of using ENMs such as nanosilver and ionic silver in industrial processes and consumer products.
