There are several visual dimensions of food that can affect food intake, example portion size, color, and variety. This dissertation elucidates the effect of number of pieces of food on preference and amount of food consumed in humans and motivation for food in animals. Chapter 2 Experiment 1 showed that rats preferred and also ran faster for multiple pieces (30, 10 mg pellets) than an equicaloric, single piece of food (300 mg) showing that multiple pieces of food are more rewarding than a single piece. Chapter 2 Experiment 2 showed that rats preferred a 30-pellet food portion clustered together rather than scattered. Preference and motivation for clustered food pieces may be interpreted based on the optimal foraging theory that animals prefer foods that can maximize energy gain and minimize the risk of predation. Chapter 3 Experiment 1 showed that college students preferred and ate less of a multiple-piece than a single-piece portion and also ate less in a test meal following the multiple-piece than single-piece portion. Chapter 3 Experiment 2 replicated the results in Experiment 1 and used a bagel instead of chicken. Chapter 4 showed that college students given a five-piece chicken portion scattered on a plate ate less in a meal and in a subsequent test meal than those given the same portion clustered together. This is consistent with the hypothesis that multiple pieces of food may appear like more food because they take up a larger surface area than a single-piece portion. All together, these studies show that number and surface area occupied by food pieces are important visual cues determining food choice in animals and both food choice and intake in humans.

The unpleasant bitter taste found in many nutritious vegetables may deter their consumption. While bitterness suppression by prototypical tastants is well-studied in the chemical and pharmacological fields, mechanisms to reduce the bitterness of foods such as vegetables remain to be elucidated. Here tastants representing the taste primaries of salty and sweet were investigated as potential bitterness suppressors of three types of Brassicaceae vegetables. The secondary aim of these studies was to determine whether the bitter masking agents were differentially effective for bitter-sensitive and bitter-insensitive individuals. In all experiments, participants rated vegetables plain and with the addition of tastants. In Experiments 1-3, sucrose and NNS suppressed the bitterness of broccoli, Brussels sprouts, and cauliflower, whereas NaCl did not. Varying concentrations of NaCl and sucrose were introduced in Experiment 4 to assess the dose-dependency of the effects. While sucrose was a robust bitterness suppressor, NaCl suppressed bitterness only for participants who perceived the plain Brussels sprouts as highly bitter. Experiment 5, through the implementation of a rigorous control condition, determined that some but not all of this effect can be accounted for by regression to the mean. Individual variability in taste perception as determined by sampling of aqueous bitter, salty, and sweet solutions did not influence the degree of suppression by NaCl or sucrose. Consumption of vegetables is deterred by their bitter taste. Utilizing tastants to mask bitterness, a technique that preserves endogenous nutrients, can circumvent this issue. Sucrose is a robust bitter suppressor whereas the efficacy of NaCl is dependent upon bitterness perception of the plain vegetables.

Engineered nanoparticles (NP; 10-9 m) have found use in a variety of consumer goods and medical devices because of the unique changes in material properties that occur when synthesized on the nanoscale. Although many definitions for nanoparticle exist, from the perspective of size, nanoparticle is defined as particles with diameters less than 100 nm in any external dimension. Examples of their use include titanium dioxide added as a pigment in products intended to be ingested by humans, silicon dioxide NPs are used in foods as an anticaking agent, and gold or iron oxide NPs can be used as vectors for drug delivery or contrast agents for specialized medical imaging. Although the intended use of these NPs is often to improve human health, it has come to the attention of investigators that NPs can have unintended or even detrimental effects on the organism. This work describes one such unintended effect of NP exposure from the perspective of exposure via the oral route. First, this Dissertation will explain an event referred to as brush border disruption that occurred after nanoparticles interacted with an in vitro model of the human intestinal epithelium. Second, this Dissertation will identify and characterize several consumer goods that were shown to contain titanium dioxide that are intended to be ingested. Third, this Dissertation shows that sedimentation due to gravity does not artifactually result in disruption of brush borders as a consequence of exposure to food grade titanium dioxide in vitro. Finally, this Dissertation will demonstrate that iron oxide nanoparticles elicited similar effects after exposure to an in vitro brush border expressing model of the human placenta. Together, these data suggest that brush border disruption is not an artifact of the material/cell culture model, but instead represents a bona fide biological response as a result of exposure to nanomaterial.

The global demand and trade for fruits and vegetables is increasing at national and international levels. The fresh fruits and vegetables supply chain are highly vulnerable to contamination and can be easily spoiled due to their perishable nature. Due to increases in fresh fruit and vegetable trade shipment volume between countries, the fresh food supply chain area is the highly susceptible and frequently prone to food contamination. The inability of firms in the fresh food business to have a good supply chain visibility and tracking system is one of the prominent reasons for food safety failure. Therefore, in order to avoid food safety risk and to supply safe food to consumers, the firms need to have an efficient traceability system in their supply chain. Most of the research in the food supply chain area suggests the implementation of a highly efficient tracking system called RFID (Radio frequency identification) technology to firms in the food industry. The medium scale firms in the fresh food supply chain business are skeptical about implementing the RFID technology equipped traceability system due to its high cost of investment and low margins on fresh food sales. This research developed two methods to measure the probability of food safety risk in food supply chain. These methods use the information gain from RFID traceability systems as a tool to measure the amount of risk in the fresh food supply chain. The stochastic optimization model is applied in this study to determine the risk premium by investing in RFID technology over the electronic barcode traceability system. The results show that there is a reduction in buyer (Type II error) and seller risk (Type I error) for RFID technology employed traceability system compared to electronic barcode system. It is found from stochastic optimization results that there is a positive risk premium by investing in RFID traceability system over the current systems and suggests the implementation of RFID traceability system for complex medium scale fresh produce imports to reduce the food safety risks. This research encourages the food industries and government agencies to evaluate alternatives to update supply chain system with RFID technology.

The unpleasant bitter taste found in many nutritious vegetables may deter people from consuming a healthy diet. We investigated individual differences in taste perception and whether these differences influence the effectiveness of bitterness masking. To test whether phenylthiocarbamide (PTC) `supertasters' also taste salt and sugar with greater intensity, as suggested by Bartoshuk and colleagues (2004), we infused strips of paper with salt water or sugar water. The bitterness rating of the PTC strip had a significant positive linear relationship with ratings of both the intensity of sweet and salt, but the effect sizes were very low, suggesting that the PTC strip does not give a complete picture of tasting ability. Next we investigated whether various seasonings could mask the bitter taste of vegetables and whether this varied with tasting ability. We found that sugar decreased bitterness and lemon decreased liking for vegetables of varying degrees of bitterness. The results did not differ by ability to taste any of the flavors. Therefore, even though there are remarkable individual differences in taste perception, sugar can be used to improve the initial palatability of vegetables and increase their acceptance and consumption.

Epidemiological studies have identified obesity as a risk factor for numerous chronic diseases such as adult onset diabetes, hypertension, and hypercholesterolemia. In both humans and laboratory animals, high-fat diets have been shown to cause obesity. Increases in dietary fat lead to increased energy consumption and, consequently, significant increases in body fat content. CD36 has been implicated in fat perception, preference, and increased consumption, but it is yet to be tested using a behavior paradigm. To study the effect of CD36 on fat taste transmission and fat consumption, four CD36 knockout (experimental) mice and four Black 6 wildtype (control) mice underwent 20 days of fat preference and perception testing. Both groups of mice were exposed to foods with progressively increasing fat content (10%, 12.5%, 15% 17.5%, 20%, 45%) in order to assess the effect of CD36 on fat preference. Afterward, the mice were subjected to an aversive conditioning protocol designed to test the effect of CD36 on fat taste perception; development of a conditioned taste aversion was indicative of ability to taste fat. Especially, knockout mice exhibited diminished preference for and reduced consumption of fat during preference testing and were unable to identify fat taste as the conditioned stimulus during aversive conditioning. A repeated measures ANOVA with Bonferroni correction revealed a significant main effect of group on fat consumption, energy intake, and weight. Linear regression revealed CD36 status to account for a majority of observed variance in fat consumption across both phases of the experiment. These results implicate CD36 in fat taste perception and preference and add to the growing body of evidence suggesting fat as a primary taste.

Foodways in societies at every social scale are linked in complex ways to processes of social change. This dissertation explores the interrelationship between foodways and processes of rapid social transformation. Drawing on a wide range of archaeological and ethnographic data from the Cibola region, I examine the role of foodways in processes of population aggregation and community formation and address how changes in the scale and diversity of social life interacted with the scale and organization of food production and consumption practices. To address the interrelationships between foodways and social transformations, I employ a conceptual framework focused on two social dimensions of food: cuisine and commensality. This study comparatively examines cuisine and commensality through time by investigating a range of interrelated food activities including: food production, storage, preparation, cooking, consumption and discard.

While settlement patterns and other more obvious manifestations of aggregation have been studied frequently, by examining foodways during periods of aggregation and social reorganization this study provides new insights into the micro-scalar processes of social transformation, cuisine change, and economic intensification associated with increases in settlement size, density, and social diversity. I document how food production and preparation intensified in conjunction with increases in the size of settlements and the scale of communal commensal events. I argue that foodways were a critical aspect of the social work of establishing and maintaining large, dense communities in the 13th and 14th centuries. At the same time, widespread changes in commensal practices placed a larger burden on household surplus and labor and women were likely the most affected as maize flatbreads and other foods made with finely ground flour were adopted and became central to cuisine. As such, this study provides insights into how rapid social transformations in the late 13th and 14th centuries were experienced differently by individuals, particularly along gendered lines. Studies of foodways, and specifically the social dimensions of food, offer a promising and often underutilized source of information about past processes of population aggregation, social integration, and transformations in the political economies of small-scale societies the past.

With the push towards interdisciplinary approaches, there has been tremendous growth of scholarship in the comparative ethnic studies field. From studies on multiracial people, to residential segregation, to the study of multiracial spaces, there is a lot to say about cross-cultural experiences. “Te de Boba” explores the relationship between identity, race, and ethnicity of millennials through a food studies lens. In particular, I analyze the role of food spaces and food pathways in developing identity and conceptions of race and ethnicity. My research site consists of a small business, a boba tea shop in Baldwin Park, California: What happens when a boba shop opens up in downtown Baldwin Park, a predominantly Latinx community? How do interethnic relationships shape the structure and city landscape of Baldwin Park, and how do these experiences in turn shape self-identity among millennials? I draw from qualitative interviews, cognitive mapping, and surveys conducted within the boba shop to understand millennial identity formation in Baldwin Park. Millennials growing up in Baldwin Park experience unique relationships between cultures, foods, and lifestyles that cross ethnic and racial barriers, creating new forms of community, which I call hub cities. I develop “hub cities” as new terminology for discussing suburban spaces that foster a sense of community within suburban areas that challenges and break down popular discourse of race and ethnicity, giving way for youth creation of alternative discourses on race and ethnicity, consequently shaping the way they form self-identity.

Given the continued increase in obesity rates in the United States, there has been growing research regarding factors related to obesity. Researchers have examined biological factors, such as set point theory, as well as various psychological factors such as motivation, self-efficacy, and eating styles. Taster-type, defined as how an individual experiences the perception of taste (particularly bitterness), is a recent area of research that has explored the potential relationship between this phenomenon and obesity. The current study examined whether taster-type impacted weight loss, along with secondary measures of BMI, waist circumference, and food neophobia, as well as taster-type’s impact on these measures over time. This study also examined the potential role of taster-type as a predictor of weight loss, independent of the psychological variables of motivation, self-efficacy, and eating styles. Ninety adult participants, consisting of 64 females and 19 males were recruited for this study. They were asked to diet for four weeks; 60 finished the full four weeks and completed psychosocial measures over two time periods. They were asked to record their food using an online food journal, attend weekly meetings for weigh-ins, and were given psychoeducational materials regarding factors affecting weight loss. The results indicated that taster-type was not a significant factor in BMI or waist circumference, but taster-type did interact with time to reveal that supertasters consistently lost weight across the four week dieting period while nontasters leveled off after Week 2. Additionally, both groups increased in food neophobia from the start of the dieting period to the end of Week 4. Consistent with previous research, motivation and self-efficacy predicted weight loss; however, taster-type did not increase the prediction of weight loss across the dieting period. This effect only occurred at Week 2. By Week 4, no psychosocial variables were significant predictors of weight loss.
