          <dc:description>Glucose intolerance is a key risk factor for developing type 2 diabetes. Dietary strategies such as vinegar consumption have shown potential in improving glycemic control, but most existing studies have relied on single time-point blood glucose measurements rather than continuous data. The purpose of this study is to evaluate the effects of red wine vinegar on blood glucose regulation using Continuous Glucose Monitoring (CGM) in adults with glucose intolerance. A 9-day randomized crossover trial was conducted among 10 female participants (n=10), (BMI &gt; 25, FBG &gt; 99 mg/dL), who consumed either 4 tablespoons of red wine vinegar daily or a vinegar pill (control) for four consecutive days before switching to the alternate treatment. CGM was used to assess mean blood glucose (MBG), time in range (TIR: 70–140 mg/dL), and fasting blood glucose (FBG) during both treatment phases. While there were no significant differences in MBG or TIR between the two treatments in the overall crossover analysis, fasting glucose was significantly lower after the vinegar phase compared to the pill phase (p = 0.024). In addition, within-subject comparisons revealed that participants who consumed vinegar first had significantly higher TIR (p = 0.022) and lower MBG (p = 0.024) compared to the pill phase. These findings suggest that the established health benefits of vinegar ingestion on blood glucose management may be discernable using CGM. Future studies should include larger and more diverse samples, extend the intervention period, and complement CGM data with traditional blood-based markers such as HbA1c and insulin levels to provide a more comprehensive evaluation of vinegar’s potential effects on glucose control.
