The Cayman Islands is a British Overseas Territory located 149 miles south of Cuba. Due to its size and relative isolation in relation to normal shipping routes. Fresh food prices are substantially more expensive in the Cayman Islands than in places such as the United States and Great Britain. The overall objective of this honors thesis is to develop a better understanding of the fresh food supply chain of the Cayman Islands. Specifically, this thesis will examine the supply chains for food products that require refrigeration and/or storage in order to prevent spoilage. This thesis takes a two-stage approach to research as it incorporates a rigorous review of literature from academic, practitioner, and general periodical sources, as well as incorporating interviews with professionals at companies and government agencies with the knowledge of the Cayman Island fresh food supply chain.
